End of Summer Meal Plan! Summer is coming to an end and we are gearing up for the new school year. If you need some meal planning inspiration to help you out these last couple of weeks of August, I’m here to help.
I can’t believe school is starting in just under two weeks. This month has been a little crazy. We thought we’d be traveling next month but now we are not. I have to remind myself that we are still in the middle of a pandemic and traveling isn’t easy anymore.
Our school starts August 31st and our entire district will be starting virtual until at least October 8th or 12th, as directed by our county’s health department. I don’t know about you but I’m back to feeling all the emotions. Phoebe’s middle school orientation was last night, online, through Microsoft TEAMS and I am very thankful for the work of our school’s administrators and teachers. This is all new for everyone but they are figuring it out.
There Isn’t Much We Have Control Over Right Now
I am going to get my mind right and stay focused. Unless something miraculous happens, I think my kids will be at home attending school virtually until the end of the year. So, I am preparing myself for the next three to four months. There isn’t much we have control over right now, but we do have control over our attitudes and what we put on the dinner table for ourselves and our families.

End of Summer Meal Plan
I’ve balanced this summer with easy simple meals, picking up takeout and making lots of pizzas. A lot of you have asked for this so here’s a meal plan for you to get you through the next couple of weeks if you are looking for some ideas. For some nights, I’ve given a few options.
I’ve also indicated where you can prep things a day in advance. Again, this meal plan isn’t anything fancy. And I don’t know about you, but I’ve been cooking something almost everyday since March so it does get tiring and there will certainly be days where you won’t want to cook.
On those days, order take-out. Pick up a pizza. Buy grocery store sushi. Do whatever you need to do. It’s all okay in my book.

Cobb Salad: there are a few ways to make the chicken here: buy a rotisserie chicken, make a roast chicken or throw frozen chicken breasts into the instant pot. Recipe here.

Overnight Oats (you need to make this Tuesday night)
Tuna rolls or a tuna melt
Pasta with Tomatoes and Artichokes
THURSDAY
Breakfast Quesadilla
Zucchini Pizza Bites
FRIDAY
Açaí Smoothie Bowl at home, or this mango smoothie bowl as shown above
Flatbread Pizza (yes, pizza two days in a row; we love pizza)
