Loaded Tuna Salad with Apples! Super chunky and full of texture, crunchy bits and flavor, you are going to love this simple yet delicious tuna salad! Don’t skip the granny smith apples!

Hello Friends! 

How is everyone doing? I can’t believe it’s almost July! We are heading to Asbury Park, NJ this weekend for the 4th. It will be just a girls trip and I’m hoping to spend some quality time with my girls. Phoebe has started her summer job and Madeline is doing volleyball camp. I’ve been in a very good and steady routine. I love routines and schedules. They just work for me.

Faster Way to Fat Loss

I’m still trucking along. You can click here if you don’t know what this program is all about. I’m still intermittent fasting for 16 hours everyday. I did take a break while I was on vacation but I still watched my portions and what I ate. I did enjoy myself, had cocktails and dessert and still worked out. This is why I think this program is so sustainable and something I can really just continue to do. 

My goal right now is to tighten up my belly area. I’ve definitely lost weight and fat and now I’m trying to tone specific areas of my body. I feel like I can do this now, knowing what I know now about my body and how to lose fat. I would have never thought I would share a video of myself working out with just a sports bra and pants (no tank top) but I did yesterday! ha! to thousands and thousands of you all. I did this for 2 reasons: 1) to inspire you. I received soooo many direct messages thanking me for the inspiration just to get up and move your body and 2) to show you that perfect doesn’t really exist. I’m very happy with where I am now and I have so much confidence now. I’m still a little flabby in my mid section but hey, I’m a work in progress and my body is real. My only goal is to motivate you all to get up and move if that’s what you want to do. 

My next check-in will be at the end of August. I have a personal goal I’m trying to reach. Stay tuned. 

Loaded Tuna Salad with Apples

I have been making this tuna salad for a few weeks now and I’m still not tired of it. Loaded with crunchy bits, flavor, sour, creamy and so much deliciousness, I hope you try it! I will seriously make this for lunch and eat this by the spoonful, or sometimes in a raw bell pepper. I hope you enjoy!

Loaded Tuna Salad with Apples

Servings 4 .. or one! just for you! Enjoy this tuna salad in a sandwich, salad, in a raw bell pepper or just on its own by the spoonful!
In the video, I forgot to add pecans. They are noted below. Edamame would also be a lovely addition to this tuna salad.

Ingredients

  • 1 can albacore tuna drained
  • 1 large carrot peeled and diced
  • 2 small seedless cucumbers diced
  • 1/2 Granny Smith apple diced
  • 2 tablespoons green onions diced, + more if desired
  • 1/3 or 1/4 cup pickled asparagus or pickled red onions* chopped fine
  • 1/3 cup chopped pecans
  • 1 tablespoon mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 splash olive oil extra virgin
  • salt and pepper to taste
  • Everything but the bagel seasoning to taste; optional

Instructions

  • Using a large mixing bowl, mix together all of the ingredients. Mix, taste and adjust any seasoning as desired. Enjoy this tuna salad in a sandwich, in a salad, in a raw bell pepper or just on its own by the spoonful!
