5 Crunchy Salads I’ll Be Eating All Summer Long! These are salads that are hearty, healthy, filling and delicious! Bust out your spoons and try one of these recipes today!

Hello friends! We are T- minus one day from the last day of school! I think our district is the last one out here in my area. Last day of school is tomorrow, Wednesday and we are so excited! The first official day of summer is June 21st but I think kids and families everywhere celebrate once school is out.

This summer, I’ll be munching on what I am calling “crunchy salads”, or salads you eat with a spoon. These are my favorite ones because there are so many bits and pieces and textures and so much flavor! Best part? You can add any protein: chicken, beef, salmon, tofu, beans, etc. 

Some of you have asked for an update on my weight loss and fitness program. I’m now currently down 12 lbs. but am not focusing on the number on the scale. I’m focusing on what I am seeing and changes and muscle definition on my body. I’m trying to tone my arms and mid-section (tummy) more . .  but best of all? I still feel great! What I am doing and you can read more here. I finished the 6-week program and am now doing their VIP level.

5 Crunchy Salads I’ll Be Eating All Summer Long

Jennifer Aniston salad This is my version of the salad Jennifer made and ate on the set of Friends for 10 years! Bulgur, cucumbers, chickpeas, mint, parsley and more, I see how she ate this salad for 10 years. It’s so good!

Chopped Salad with crispy chickpeas. Easy to throw together and so filling and delicious! Use the vegetables you have at home and I highly recommend making the crispy chickpeas for added flavor and crunch. 

Super Simple Cucumber Tomato Salad! When you have fresh, quality ingredients, you don’t need to add much to whip up a delicious and fresh summer salad!

Still crunchy but maybe eat with a fork.

Got cherries? Make my Fresh Summer Fruit Salad with Northwest Cherries!! The best way to enjoy a light and delicious salad this summer! Add some delicious and nutritious Northwest cherries! 

Simple Smoked Salmon Salad with pickled red onions. Super easy and you can throw this salad together in under 5 minutes. If you like smoked salmon, you have to give this salad a try!

I have to add a fruit salad to this list! Celebrate summer with this Zucchini Watermelon and Feta Salad! SO easy to make and absolutely delicious!

    The zucchini, watermelon and feta salad sounds so refreshing and crunchy too. I love a salad with some crunch to offset having croutons or sunflower seeds but I still get the crunchiness. I’m excited to try!

    thank you for all of these, had not seen or heard of the one with chickpeas, mint, and cucumbers, etc, love the textures at the very least, and as you write, see how she kept making it for 10 years, thank you!
