Breakfast Quesadilla with Eggs, Spicy Mayo and Furikake. Extending the tortilla trend one more time to show you this breakfast version with a kick! 

I’ve gone viral on TikTok with this tortilla hack and have loved seeing all the photos you guys are sending me. 2021 has had a very rough start but this little food hack has brought me some joy and fun in the kitchen. An easy, delicious way to make a snack or a meal? I mean, come on. I love it.

  • my Nori version
  • a pizza version: cheese, tomato sauce, and toppings
  • my dessert version above (and try it with a crepe too!)
  • a tuna version
  • a veggie version
  • a spam version
  • a fried tofu version
  • a taco version! Ground beef, cheese, veggies, salsa
  • a breakfast version with eggs, cheese and bacon

The possibilities really are endless. Let’s make this Breakfast Quesadilla with Eggs Spicy Mayo and Furikake!

How To Fold and Does It Really Matter?

The constant question that keeps coming up is what goes in what section and does it really matter? True, if you want the tortilla to stick and close more securely, there is a method to this madness. Some people say to add the sticky component, or sauce or the cheese, to the bottom half so when you are folding the tortilla, it all sticks together better. As shown above with the dessert version: I have the Nutella and peanut butter in the lower half so I start and end with something sticky, which helps everything to stay in place more securely. 

I kinda feel like that might be putting too much thought into this easy trend because as long as you pan fry it or throw it in a panini press, it all sticks together anyway.  But I will say this: when adding spinach, it probably would work better if I placed it in one of the top sections. But hey, again, I think just have fun with it and make them.

Breakfast Quesadilla with Eggs Spicy Mayo and Furikake

Ingredients

  • 2 tablespoons Japanese mayonnaise I love the Kewpie brand
  • 1 tablespoon Sriracha
  • 2 large burrito sized tortillas
  • scrambled eggs see above to see my creamy scrambled eggs recipe
  • furikake
  • green onions diced
  • crispy bacon
  • fresh spinach
  • butter

Instructions

  • To make the spicy mayo: mix together the Japanese mayonnaise and the Sriracha until blended and set aside.
  • Using a knife or scissors, make a cut on the tortilla from the bottom up, halfway only. Place all of your ingredients into "sections" of the tortilla. Starting with the spicy mayo, brush or slather on as much as you like in the lower left hand corner. Add your eggs and top with the furikake and green onions. Add the bacon and the spinach. You can place with spinach in the upper right hand section if you'd like. Close the tortilla by flipping up the spicy mayo section up and on top of the eggs, then fold over to the side and then fold the bottom part up to close.
  • Spread some butter on the closed tortilla on both sides and then cook in a pan over medium high heat for a few minutes, or until warmed and golden brown. Cook for a few minutes on the other side. Remove from the heat and enjoy! You can also cook this in a panini press.
