Crispy Potato Eggs

Crispy Potato Eggs!!! So easy to make and delicious! This is like eating your eggs in a hash browns nest. If you like hash browns with your eggs, you will love this! I saw this on Instagram here. 

My kids start school tomorrow and – although I’ve still been getting up early (between 6:30am and 7am) every morning, I have to go to bed early tonight and prepare myself for the chaos that we will see tomorrow morning. My kids have to be at the bus stop by 7am and they haven’t woken up earlier than 10:30am this entire summer. Yup! tomorrow morning will be rough to say the least.

For breakfast during the school year, we always start out pretty strong. Eggs, sometimes I even freeze homemade waffles ahead of time, banana bread muffins, avocado toast, smoothies etc. but somewhere along the way, we resort back to frozen waffles, cereal, oatmeal, quick breakfast sandwiches and fresh fruit. I am going to try to re-introduce overnight oats to the girls. They didn’t like them the first few times I have made them but we’ll see. 

I made these Crispy Potato eggs the other day and the girls devoured this. So, this is what I am going to make for them tomorrow morning! 

I can eat eggs at any time of the day and I love breakfast foods for lunch as well. I recently saw this on Instagram on Alexandra Cooks Instagram. She made tacos and this is from Ali Slagle’s new book: I Dream of Dinner

This is brilliant, really. I mean hash browns with eggs are so good. So, bravo to Ali for coming up with this one! I think the condiments that you can drizzle on top of this are endless. Hot sauce, chili oil, chimichurri, pesto and the list goes on. If your kids like eggs and potatoes, I urge you to wake up a little earlier and make these for them. Heck, just make them for yourself with some coffee after the kids leave for school. Ha!

Next time, I will definitely try these with a tortilla!
