- 1 tablespoon olive oil extra virgin
- 1/2 cup grated Russet potato unpeeled, see notes on original recipe
- 1/4 cup cheddar, Asiago, mozzarella or cheese of choice grated
- 2 large eggs
- salt and pepper to taste
- hot sauce or chili oil
