Fall Inspired French Toast!! Delicious French toast with hints of pumpkin pie spice! So delicious and so easy to make!

Yes, a fall inspired recipe in August. It’s the end of August and my kids started school today. My oldest, Phoebe requested this for breakfast for this week and so I’m going to show you how to freeze these so you can easily whip them out of your freezer and into the toaster oven for a quick, delicious weekday breakfast!

Fall Inspired French Toast

Whoever came up with pumpkin pie spice is a genius. I don’t care what you say. . . I love it. In my coffee, my latte, in muffins, popovers, cakes, waffles, banana breads, cookies and everything. So, naturally I had to reach for it for this Fall inspired french toast! It actually makes perfect sense because most recipes use cinnamon and nutmeg and those are two key ingredients for French toast. Click here to read about the history of french toast.

This recipe is extremely easy to make and very hard to mess up. The biggest question I get? What kind of bread should I use? I would recommend challah, brioche, or a thick white bread. I’m using a farmhouse white bread from my grocery store’s bakery. Try this recipe and let me know what you think!

Enjoy!

Fall Inspired French Toast

Prep Time5 minutes mins

Total Time15 minutes mins
Course: Breakfast
Cuisine: American
Keyword: fall inspired french toast, french toast, pumpkin pie spice
Servings: 2
Author: hipfoodiemom

Ingredients

  • 1 heaping teaspoon pumpkin pie spice
  • 1 tablespoon white granulated sugar
  • 2 large eggs
  • 1/4 cup milk any kind
  • 1/2 teaspoon vanilla extract optional if you like them sweet
  • 2 tablespoons unsalted butter*
  • 4 slices thick bread challah, brioche, or white bread
  • maple syrup

Instructions

  • In a small bowl, whisk together the pumpkin pie spice and sugar. Add the eggs, milk and the vanilla (if using). Whisk until all combined and pour into a shallow dish, bowl or pie plate.
  • Using a large skillet over medium high heat, heat the butter in your skillet or pan. Dip each bread slice into the egg mixture, on both sides. Fry slices until golden brown, then flip to cook the other side. Serve with maple syrup.
  • See my notes below on how to freeze.

Notes

*You can also cook the french toast in olive oil if desired
How to FREEZE:
Place the French toast in a single layer on a cookie sheet and put them in the freezer until partly frozen for about 1 to 2 hours. After frozen solid put the frozen French toast into a freezer bag. You can also wrap each piece of toast in a sheet of plastic food wrap, parchment paper or plastic wrap and place the wrapped toast in a freezer bag or tin foil. To re-heat, simply reheat in your toaster oven.
I would try to eat the frozen french toast slices within 1-2 weeks.
