Summer’s almost here. . you know because the kids are out of school and you can find sweet corn on the cob everywhere. Here’s another great, fresh salad to enjoy! This is the easiest and most yummy (most yummy?) salad out there! It’s light and refreshing. ’nuff said. Thank you to the Authentic Suburban Gourmet for her lovely recipe! I just added yellow and orange bell peppers for color and taste!
Friends, what are you doing this weekend? I think most people will be firing up their grills and grilling some food. It’s my favorite thing to do when the weather gets nicer. Fire up the grill, pull off the patio furniture covers and pour some wine or something refreshing!
I absolutely LOVE foods like this. Very little cooking involved. . you do have to grill some corn but that’s easy! Don’t skip that part! You also cannot skip the cilantro vinaigrette! It’s so good!

Avocado Grilled Corn Salad with Cilantro Vinaigrette
Ingredients
For the salad:
- 2 to 3 ears grilled corn removed from the cobb
- 1 to 2 ripe avocados cubed or diced and sprinkle with lemon juice to prevent browning if needed
- 1 cup tomatoes diced
- 1 to 2 cups assorted bell peppers diced
- 1/2 to 1 small red onion finely diced
- 3/4 cup crumbled feta
- 1 cup cucumbers diced
For the Cilantro Vinaigrette:
- 6 tablespoons good quality olive oil extra virgin
- 2 tablespoons red wine or apple cider vinegar
- 1/2 to 1 teaspoon garlic powder
- 2 tablespoons fresh cilantro minced or finely chopped
- salt and pepper to taste
Instructions
- For the salad: Mix together all of the above ingredients in a medium sized bowl and set aside.
- For the Cilantro Vinaigrette: Whisk together all of the ingredients or place into a mason jar with fitted lid and shake. Taste and adjust anything as desired.
- When ready to serve the salad, add the dressing and gently toss. Enjoy!
