Super Moist and Delicious Banana Bread!!! This banana bread is so good! Take a look at the recipe card to see my secret ingredient! This banana bread can be the foundation for different variations: add walnuts, chocolate chips, or both! 

You guys! I have done it. I know you’re not really supposed to use the word moist with food but there’s no other word to describe this banana bread. My Super Moist and Delicious Banana Bread!! It’s so good!

New Addition to Our Family

If you’ve been watching my stories, you know we have a new puppy, Coco. She is a mini labradoodle and is the sweetest little thing. She’s still potty training but she can sleep through the night in her crate from 9pm to about 5:30am. Not going to lie, I am exhausted but we are very happy with her and she’s a smart and good puppy. 

We had some ripe bananas and Madeline suggested that we make banana bread. This is one of Phoebe’s, my oldest, favorites! If I can bake this banana bread while sleep deprived and a little delirious, then you can too!

Super Moist and Delicious Banana Bread

Ingredients

  • 8 tablespoons (1 stick) unsalted butter at cool room temp
  • 2/3 cup light brown sugar
  • 1 1/2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 3 small to medium sized bananas mashed, about 1 1/2 cups*
  • 1/3 cup applesauce no sugar added
  • 2 tablespoons honey
  • 2 large eggs
  • 2 1/4 cups all-purpose flour
  • 1 fresh banana sliced in half lengthwise; optional

Instructions

  • Preheat your oven to 350 degrees and line a baking loaf pan with parchment paper and spray.
  • Using a stand mixer fitted with the flat beater or paddle attachment, combine the butter, sugar, vanilla, cinnamon, nutmeg, baking soda, baking powder, and salt, beating until smooth. Add in the mashed bananas*, applesauce, honey, and both eggs, again beating until smooth. Add in the flour and beat again just until all combined.
  • Pour the batter into the prepared loaf pan and smooth the top with a butter knife or spoon. Arrange the sliced banana on top (if using), gently pressing into the batter just slightly. Let it rest at room temperature for 3 to 5 minutes and then bake. If not adding a banana on top, simply place into the oven and bake the banana bread for 65 to 70 minutes, OR until a tester inserted comes out clean.
  • Allow the bread to cool for 10 minutes in the pan. Remove it from the pan, and cool it completely on a rack. Slice and enjoy!

Notes

*If you end up with more than 1 1/2 cups of mashed banana, that's fine. Just add more apple sauce. When I end up with almost 2 cups of mashed banana, I add a total of 2/3 cups applesauce. 

Recipe adapted from this one. I added a bit more vanilla, the applesauce, less honey and added the banana on top!
