Mushroom Toast With Garlic and Chives. So easy to make and so delicious. Make this for any meal or snack of the day. Highly recommend the balsamic glaze!
Healthy Habits for The New Year
Reese Witherspoon shared some daily habits that she’s working on in the new year:
1. Start the day with a big glass of water.
2. Get 10 mins of outdoor light. @Hubermanlab recommends morning light.
3. Spend 30 – 60 mins reading without distraction everyday.
4. In bed by 10pm. *no late night TV binges. Try to get 8 hours of rest!
Ina Garten followed up with this:
“That sounds great but I’m probably not doing any of those things! LOL!! My formula is easier to follow:
1. Drink more large cosmos
2. Stay up late watching addictive streaming series
3. Stay in bed in the morning playing Sudoku instead of reading a good book.
4. Spend more time (safely) with people you love. In a pandemic, I do what I can! ❤️❤️❤️
This got me thinking about my daily routine and habits. I actually woke up this morning feeling in little in a rut. We have nothing planned; we are literally taking each day as it comes this year. It’s silly but sometimes if I don’t have anything to look forward to, like a trip for example or a friend visiting, I can easily get stuck in our daily routine. For me, I have to exercise. I do think I should find a new way to start me day. Right now, I immediately look at my phone, get out of bed, come downstairs, make my coffee and then feed Cinnamon, Coco and make breakfast for Phoebe and Madeline and pack lunches if Madeline is bringing a lunch that day.
Maybe I need to journal? Pray? Meditate? what do you do?
Mushroom Toast With Garlic and Chives
One thing I am doing right this year: cooking and having fun in the kitchen again. I’m trying to eat less meat. I love mushrooms. One of my favorite vegetables. Today, instead of making avocado toast, I wanted to mix it up. Make this toast and be happy.
Mushroom Toast With Garlic and Chives
Ingredients
- 1 tablespoon olive oil extra virgin
- 4 to 6 oz. cremini mushrooms sliced
- salt and pepper
- 1 slice bread any kind, toasted
- 1 clove garlic
- butter optional
- balsamic glaze
- chives diced
- Maldon sea salt flakes
Instructions
- Using a sauté pan, heat the olive oil over medium-high heat. Add in the mushrooms and sauté until the mushrooms are softened, about 5 to 8 minutes. Season with salt and pepper.
- While your bread slice is still hot from the toaster, rub on the garlic. Spread on some butter if desired. Top with the sautéed mushrooms and drizzle balsamic glaze over the top. Sprinkle chives and Maldon sea salt flakes to finish. Enjoy!
