I love all vegetables! So when I find new and different ways to enjoy them, I get excited. Also, summer break is right around the corner and I need all the quick, simple and delicious hacks and short cuts you can give me. Who else is with me?

My Love for Bell Peppers

I love bell peppers. I always have. Raw, stuffed, roasted or grilled. I think they are delicious and so versatile. And you can add them to practically anything!

My Favorite Recipes Using Bell Peppers

Not only are these low carb options but they are easy, quick and delicious! I hope you try them!

1) Bell pepper sandwich: Use turkey, ham, or keep it veggie! Anything goes!
2) Wrapped bell pepper snack! Use deli meat or prosciutto!
3) Bell pepper with an egg: great for breakfast, season with salt and pepper and serve with fresh salsa!
4) Bell pepper boats (stuff them with whatever you like!): someone suggested cream cheese topped with everything bagel seasoning! Yum! I did hummus with chicken and balsamic glaze.
5) Bell pepper pizza .. maybe my favorite!
