Green Goddess Chickpea Sandwich! So fresh, zippy, delicious and so easy to make! Put this into a sandwich, wrap, salad, or enjoy on a plate with tuna and/or chicken salad! So good!
It’s January and I’m going to get real with you. In June of 2023, I had lost about 10 pounds. I went on to lose about 5 more, so I was 15 lbs. down. I was intermittent fasting, which I still try to do and I do really see benefits with doing this especially if you are over the age of 40, and I was eating smarter and my portions were very small. I honestly don’t know how I did it because now I’m hungry all the time. I was also working out about 5 to 6 days a week, which I still do. Even though, I saw great results, what I was doing was not sustainable for me.
I cook for a living, I cook and eat and make these recipe videos. I also love eating out and trying whatever recipes are going viral on the internet.
It’s January 2025 and I have gained 8-10 pounds back (I’m not completely sure because I don’t want to get on the scale). Not because I’m afraid to see the number but because I don’t want to fall into that hole of constantly weighing myself. This was me for a very long time when I was younger, and then I got married and had kids. . it’s easy to let a “number” rule your life or dictate what you eat that day. Honestly, scales can be very dangerous. Anyway, now, I’m just trying to eat better, make better choices but still enjoy food, dessert and life. I want to eat foods that make me feel good.
Green Goddess Chickpea Sandwich
I’ve worked bread back into my diet but I always try to eat gluten free. It just makes me feel better and I feel like I digest gluten free bread better. This Green Goddess Chickpea sandwich was inspired by something I saw on Facebook and it’s very similar to this recipe and really just adding more protein. I really hope you try this recipe! I really loved it! So fresh and delicious, it’s light and the perfect meal or snack to enjoy!
Green Goddess Chickpea Sandwich
Equipment
- blender, food processor or mini food chopper
Ingredients
- 1/2 medium sized ripe avocado
- 1/2 cup fresh flat leaf parsley
- 1/2 cup fresh dill
- 1/2 lemon juiced
- 2 tablespoons Greek yogurt
- 1 clove garlic
- 1 splash apple cider vinegar
- salt and pepper to taste
- 1 (15 oz) can chickpeas or garbanzo beans* drained and rinsed
- toasted bread any kind
- tomato slices
- Maldon sea salt flakes optional
- 2 green onions finely diced; for garnish
- microgreens for garnish
Instructions
- To a blender or mini food chopper, add your avocado, parsley, dill, lemon juice, Greek yogurt, garlic, vinegar, salt and pepper and blend until smooth. Taste and adjust any seasoning as needed.
- Using a medium sized mixing bowl, add your canned chickpeas and pour the green goddess dressing over the chickpeas and mash together. I like to leave a little texture but mash to whatever consistency you desire. Taste and add more salt and pepper if needed.
- Add the green goddess chickpea mixture onto a piece of toasted bread, add your tomato slice, season with a little Maldon sea salt flakes, and garnish with diced green onions and microgreens. Repeat and make more toasts! Enjoy!
- To store: the Green Goddess Chickpea mixture is best eaten within 1-2 days. Because of the lemon juice, it should not brown. Store in an airtight container in the fridge.
