Vanilla Mug Cake with vanilla glaze, made with Planet Oat Unsweetened Original Oatmilk! Takes just 2 minutes in the microwave and then you have vanilla cake with the perfect texture and it’s so good!

We are in the home stretch to summer break! I am so excited! It’s been a long school year and I am so ready for summer. I love the easier, more relaxed schedules, not having to drag my kids out of bed and more relaxed cooking and dinners. Summers are pretty easy over here and even though this summer will be a goal-heavy one, we’ll still have fun and enjoy a more relaxed summer. 

If you know me, you know I have a sweet tooth. Whether it’s fruit, or a few bites of a cookie, my energy bites or a mug cake, I love making and eating something sweet. I remember the first time I tried making a mug cake in the microwave. It did take a few tries but I know I got it down now. For just taking two minutes in the microwave, this cake and texture can’t be beat!

Vanilla Mug Cake with Vanilla Glaze

Cake need to be moist, flavorful and have the right texture in my opinion. This mug cake is all of these things! I really think the oatmilk works here! Planet Oat can be used in baking and cooking as a 1:1 replacement to dairy milks. It’s also free from dairy, peanuts, soy, and gluten.I hope you try the recipe!!

Vanilla Mug Cake with Vanilla Glaze

Ingredients

For the cake:

  • 3 tablespoons Planet Oat Unsweetened Original Oatmilk
  • 1/4 cup + 1 tablespoon all-purpose flour or gluten free 1:1 flour
  • 2 tablespoons white granulated sugar
  • 1/4 teaspoon baking powder
  • pinch of salt
  • 2 tablespoons avocado oil
  • 1 teaspoon pure vanilla extract

For the glaze:

  • 1/4 cup powdered sugar
  • 1/2 tablespoon Planet Oat Unsweetened Original Oatmilk + more if needed
  • 1/4 teaspoon pure vanilla extract optional for vanilla flavor

For the topping:

  • assorted berries for topping raspberries, blackberries, blueberries

Instructions

  • For the mug cake: Using a medium to large sized mug, whisk together the flour, sugar, baking powder and salt. Whisk in the avocado oil, Planet Oat Unsweetened Original Oatmilk and vanilla until well combined. Place your mug into your microwave for about 1 1/2 to 2 minutes.* Cook until the cake is set. Insert a toothpick into the center to ensure the cake is cooked through. Set aside.
  • For the glaze: Whisk together the powdered sugar, Planet Oat Unsweetened Original Oatmilk and vanilla (if using). Taste and adjust anything as needed.
  • Pour the glaze over the slightly cooled mug cake. Top with assorted berries if desired. Enjoy!

Notes

*Every microwave is different. Start with 1 1/2 minutes and then cook for an additional 30 seconds if needed.
