1/4 cup + 1 tablespoonall-purpose flouror gluten free 1:1 flour
2tablespoonswhite granulated sugar
1/4teaspoonbaking powder
pinch of salt
2tablespoonsavocado oil
1teaspoonpure vanilla extract
For the glaze:
1/4cuppowdered sugar
1/2 tablespoonPlanet Oat Unsweetened Original Oatmilk + more if needed
1/4teaspoonpure vanilla extractoptional for vanilla flavor
For the topping:
assorted berries for toppingraspberries, blackberries, blueberries
Instructions
For the mug cake: Using a medium to large sized mug, whisk together the flour, sugar, baking powder and salt. Whisk in the avocado oil, Planet Oat Unsweetened Original Oatmilk and vanilla until well combined. Place your mug into your microwave for about 1 1/2 to 2 minutes.* Cook until the cake is set. Insert a toothpick into the center to ensure the cake is cooked through. Set aside.
For the glaze: Whisk together the powdered sugar, Planet Oat Unsweetened Original Oatmilk and vanilla (if using). Taste and adjust anything as needed.
Pour the glaze over the slightly cooled mug cake. Top with assorted berries if desired. Enjoy!
