Easy Stuffed Zucchini Boats! Filled with tomato sauce, mozzarella cheese and pepperonis and pulled pork, these serve as delicious options for lunch or dinner if you are trying to eat low carb! I hope you give these a try! 

We’re taking a break from all the baked potatoes I’ve been eating- ha!

I love zucchini! I know these are in season and in abundance in the summer but I love that you still find these delicious vegetables year round. I love using zucchini for low carb options when meal planning. They work great because they are a sturdy vegetable and they don’t have a strong, distinct taste so they work great as vehicles or holders for other delicious fillings.

Easy Stuffed Zucchini Boats

Most kids, and well everyone, usually loves the pizza version of this recipe. It’s super easy: fill the hollowed out zucchini with tomato sauce, Italian seasoning, mozzarella cheese and top with sausage and/or pepperonis. I also love adding chili crunch hot honey, which adds a little heat and sweetness. It’s so good! 

If you’re looking to get more protein in your diet, add cooked lean ground, turkey, ground beef or pulled pork! I hope you try the recipe!

Easy Stuffed Zucchini Boats

Ingredients

  • 2 large zucchini sliced in half lengthwise and hollowed out
  • 1 tablespoon olive oil extra virgin
  • tomato sauce
  • shredded mozzarella cheese
  • Italian seasoning
  • salt and pepper
  • pepperonis
  • shredded pulled pork see recipe link below
  • chili crunch hot honey optional
  • pepperoncinis chopped; optional

Instructions

  • Preheat your oven to 400 degrees. Prep your zucchinis. Place hollowed out zucchini on a lined baking sheet. Drizzle with olive oil.
  • Fill each one with some tomato sauce, and sprinkle on some shredded mozzarella cheese over the top of each one and then season with Italian seasoning and salt and pepper.
  • Top with pepperonis and pulled pork (if using) and bake in the oven for 25 to 30 minutes, or until soft and tender and the cheese has melted nicely. Remove from the oven and drizzle chili crunch hot honey over the top and garnish with some pepperoncinis if desired. Serve and enjoy while hot!
