Spaghetti Aglio E Olio!!! A simple Italian dish of garlic, olive oil, parsley, and Parmigiano-Reggiano cheese tossed with cooked pasta. So easy to make and so good! Now, the Parmigiano-Reggiano cheese is up for debate and apparently, not how Italians make this dish. Read and watch the video below and let me know what you think! 

We are on a pasta kick this week! I could seriously eat pasta everyday and not get sick of it. I would if my waistline would let me! 

Madeline came to me yesterday and told me she was making dinner for us. Apparently, she watched a young YouTuber make this for dinner so she watched the video and said she wanted to try it. The only ingredient we didn’t already have was fresh parsley.

Spaghetti Aglio E Olio

“Spaghetti aglio e olio is a traditional Italian pasta dish from Naples. It is a typical dish of Neapolitan cuisine and is widely popular. Its popularity can be attributed to it being simple to prepare and the fact that it makes use of inexpensive, readily available ingredients that have long shelf lives in a pantry.”

I don’t know about you guys but here, we always have an abundance of pasta and jarred marinara sauce on hand in the pantry. It’s my go -to if we need something quick. I also always have good olive oil, garlic and butter so we also make butter noodles a lot too. 

If my 11-year old can make this, you can too! She and her sister did everything, even down to finely chopping the garlic and parsley. Enjoy!

Ingredients

  • 1 lb. spaghetti
  • kosher salt
  • 1/3 cup olive oil extra virgin
  • 6 to 8 large cloves garlic cut into thin slivers
  • 1/2 to 1 teaspoon crushed red pepper flakes
  • 1/2 cup fresh parsley minced
  • 1 cup Parmesan cheese freshly grated + more for serving if desired
