Easy Tofu Salad and more tofu recipes!! Light, crisp, refreshing and dressed with an Asian salad dressing, this tofu salad is so good. You have to try it!

Are you a fan of tofu? I am. It’s funny. .  this bland block of condensed soy milk can be transformed into something really delicious. My favorite way to enjoy tofu? Pan fried or in soft form: soondubu jjigae.

Health Benefits of Tofu

Tofu is high in protein and contains all the essential amino acids your body needs. It also provides fats, carbs, and a wide variety of vitamins and minerals. One 3.5-ounce (100-gram) serving of firm, calcium-set tofu offers Calcium: 53% of the Daily Value (DV)!! Our pediatrician and I were discussing more ways my daughters could get calcium and she told me that tofu was a great source of calcium, after milk, cheese and other dairy foods.

Easy Tofu Salad

I was craving a fresh, crisp salad and had some tofu to use up. Tofu is a great source of protein and pan frying it gives me the texture that I love. I just threw it on top of cold romaine and some cucumbers and mixed it with a delicious homemade dressing. Do you ever make your own dressings? I love experimenting and just throwing things together.

Ingredients

For the dressing:

  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon gochugaru optional for some heat
  • 1 pinch kosher salt
  • 1 pinch ground ginger
  • 1/2 lime fresh lime juice
  • 1 teaspoon honey
  • 1 squeeze fresh orange juice

For the salad:

  • romaine lettuce chopped
  • cucumbers sliced
  • pan fried tofu

Instructions

  • For the dressing: whisk together all of the ingredients. Taste and adjust any ingredients as needed. Set aside.
  • For the salad: place the romaine and cucumbers in a serving bowl or plate. Top with pan fried tofu. Serve with the dressing and enjoy!
