Seafood Recipes for Summer!! When you’re firing up the grill this summer, don’t forget the seafood! Grilled Cod in foil, shrimp and vegetable skewers and seared sea scallops! So good!

Seafood is one of my favorite foods. Seafood paella, seafood pasta, Coconut Shrimp Curry or just baking salmon, I could eat seafood everyday and be happy! Shrimp and Vegetable Skewers
Watch the video above to see how to prep these! I didn’t season my shrimp or vegetables because I love to also make a chimichurri sauce to go along with these, but feel free to season your shrimp and vegetables with salt, black pepper, Italian seasoning and some smoked paprika before assembling.
Please note: If using wooden skewers, soak them in water for 30 minutes to prevent burning and splintering while on the grill.
Grill the skewers for about 3 to 4 minutes on each side or until the shrimp is opaque and the vegetables are tender or starting to char just slightly. Before serving, you can also serve with a lemon butter sauce.
Grilled Cod in foil
Ingredients
- 1 lb. cod fish fillet
- kosher salt
- pepper
- 2 tablespoons unsalted butter
- 1 lemon sliced
- fresh parsley diced
- aluminum foil
Instructions
- Use 2 large pieces of heavy aluminum foil, overlapped. Place the fish in the center and season generously with salt and pepper. Place butter pieces on top of the cod, place the lemon slices on top and garnish with some fresh parsley.
- Fold the foil around the fish and seal, creating a tent for the cod.
- Using an outdoor grill that is heated to high (500 to 550 degrees), place the foil packet on the grill grates and close the grill. Grill for about 15 minutes.
- Remove from oven, open carefully, serve and enjoy!
