Summer is in full swing and we are loving it! My kids and I are taking it easy this summer and are spending a lot of time by the pool, at the library, riding our bikes, and venturing out to the Children’s Museum. When I was a kid, my fondest memories are of summers where we just got to play with our friends and explore our neighborhood.

My youngest, who is 6 years old and just recently finished kindergarten, announced that she really needed a summer break and that she just wanted to sleep in and play. Makes perfect sense to me! So, I’m keeping the camps and lessons to a minimum and I’m hoping to make some lasting memories this summer with my girls.

This means our routine is a little more relaxed and meal time is simpler. I don’t want to spend a lot of time on meal preparations. For breakfast, it’s smoothies or cereal! My oldest loves getting the bowls, our milk and pouring out the cereal herself! And for lunch, we stick with salads, sandwiches, wraps and fruit salad. Can’t get much simpler than that!

And for summer snacks, I like to keep things just as quick and easy but still fun and tasty! When I first made apple donuts for my kids, they LOVED them. It’s no secret that we love doughnuts so when my husband had the brilliant idea to buy an apple corer and make apple donuts, we were wondering how we lived for so long without making these!

Apple donuts are super fun and delicious and healthier for my kids. There’s no fried doughnut, but instead, apple rings!! Real apples! And my kids get to incorporate their favorite cereals, which they love. I feel good about the cereals they chose from Cereal Apple Donuts! Fresh apple slices topped with peanut butter and almond butter and some of our favorite cereals from General Mills! The perfect summer snack!

I let my kids make their own cereal apple donuts, this way Phoebe and Madeline can each make what they want to eat. One of their favorite combinations is peanut butter and Reese’s Puffs! Who can blame them?! It’s one of my favorites too!

These Cereal Apple Donuts are super easy to make and can be transported easily in containers. We took a bunch to the pool the other day and these made for a great snack after swimming.

Cereal Apple Donuts

Special equipment needed: an apple corer

Ingredients

For the cereal apple donuts:

  • 2 to 3 apples

Spreads:

  • almond butter
  • peanut butter
  • Nutella

Toppings:

  • Cinnamon Toast Crunch
  • Reese’s Puffs
  • Honey Nut Cheerios
  • hemp seeds
  • almonds
  • sprinkles
  • sliced strawberries
  • raisins

Instructions

  • Using your apple corer, remove the core from your apples and cut the apple into slices, cutting crosswise. Spread on your topping of choice and decorate with your favorite cereal, sprinkles, raisins, almonds and more! Enjoy!
