Avocado and Hummus Toast: 2 Ways!

Avocado Toast with Chimichurri | HipFoodieMom.com

 

So, the summer is pretty much here and the school year is coming to an end. I can hardly believe it’s almost June?!  Where did the time go? Summer for us means sleeping in, relaxing a bit more but also keeping busy and entertaining the kids. We’re keeping it simple this summer and have just signed up for art classes and karate. I say, let them enjoy the summer. .  but this also means (for me) planning play dates, a big shopping trip to Michael’s (I am so not craftsy but I love this store because they have so much stuff you can get there for the kids activity-wise), the Farmer’s Market (my fave!), beautiful, gorgeous weather here in Washington and quicker meals.

 

With the kids home with me during the summer and keeping busy, I won’t have a lot of time to cook; mainly lunch. And, although they probably wouldn’t mind if I did, I’m not going to give them chicken nuggets everyday.  Ever since I discovered making homemade Avocado Toast with Chimichurri 2 | HipFoodieMom.com

 

I absolutely love all of the delicious flavors going on here on this little toast. And if you have the chimichurri sauce on hand, you can whip this up in no time. And next time, I must try IMG_2049-1

Avocado and Hummus Toast with Chimichurri sauce

Course: Snack or Meal

Ingredients

  • toasted baguette; sliced
  • hummus
  • avocado; sliced
  • seedless cucumbers; peeled and sliced
  • carrots; peeled and sliced
  • chimichurri sauce
  • salt and pepper optional
  • olive oil

Instructions

  • Toast your baguette slices and prep all of your veggies.
  • To assemble: spread a generous amount of your favorite hummus on the toasted baguette. Layer on the avocado, top with the sliced carrots and cucumbers (alternating if desired), top with your chimichurri sauce, lightly drizzle on a little extra olive oil (if desired) and lightly season with kosher salt and pepper (if desired).

Don’t like avocados?  Or chimichurri sauce? Give this one a try. My girls would deconstruct their toasts but eat everything so I’ve learned to just give them toast with hummus and the cucumbers, carrots and sunflower nuts on the side. Hey, as long as they are eating it, it’s ok by me. So, if you are looking for a quick, light and healthy snack or meal, give this one a try!

 

I am currently obsessed with sunflower nuts. Can’t get enough of them. I think they are so delicious and add something unique to this extremely quick and easy snack or meal.

Hummus Toast with Cucumbers and Carrots

Ingredients
  • toasted baguette; sliced
  • hummus
  • seedless cucumbers; peeled and sliced
  • carrots; peeled and sliced
  • sunflower nuts
  • salt and pepper
Instructions
  1. Toast your baguette slices and wash and prep all of your veggies.
  2. Lightly season with salt and pepper if desired.

    I love chimichurri and I am so craving avocados but have a hard time finding them for whatever reason. This toast sounds so comforting and yet light and healthy.

    I can’t believe it’s June either. I am looking forward to summer so much. I hope it’s a nice and long one!

    Chimichurri on avocado and hummus toast is definitely a new way to try it Alice, and such an interesting combination! I still have some in my fridge, from some sliders I made and I had completely forgotten. I have frozen country bread, an avocado, all the necessary thing to make hummus (I always do) and some chimichurri. What a great lunch I will make for myself tomorrow!
