Toast your baguette slices and wash and prep all of your veggies.
To assemble: slather on a generous amount of hummus on the toasted baguette, layer on the cucumbers and carrots (alternating if desired), slather on some more hummus and sprinkle on some sunflower nuts (I added more hummus so the sunflower nuts would stick on better). Lightly season with salt and pepper if desired.
