I’ve always had a sweet tooth. I blame it on my father, whom I inherited it from. My dad always kept our freezer stocked with ice cream; ice cream was his thing and quickly became my thing too, especially in the summer time. What could be better in 100 degree weather (summers in Texas; I wish I was joking) than something like this?

As I got older, my father would get us more into different cheeses and charcuterie. He’s a foodie and exposed us kids to all sorts of delicious foods. With all the ice cream and cheese eating, I discovered that I couldn’t digest it all very well. This was a rude awakening for me in my adult years.

It’s summer time now and my kids and I are often stopping for ice cream. Unless they have a lactose-free option, I just don’t get anything. And watch my kids enjoy their ice cream cones.

Who wants to live like that?!! Not me!

I’ve tried all sorts of non-dairy frozen desserts and nothing has tasted quite like ice cream. Until now.

    I’ve been buying my lactose-intolerant mom Lactaid ice cream ever since it came out. It’s a lifesaver! She can have her milkshakes (with Lactaid milk) or her coffee over ice cream and not get sick!
    These sandwiches look amazing. I love using chocolate chip cookies to make them with, and I could not be trusted around these guys! Like you, my sweet tooth is strong, and it’s a big ice cream sandwich lover!

    Can you believe that I have still never had an ice cream sandwich. Mint choc chip ice cream is one of my pregnancy cravings at the moment though, so this would be a great way to eat it!

    Well your dad sounds all types of awesome! My thing growing up with my dad was always ice cream in the summer too. But, like you I developed a lactose intolerance as I got older. I drink lactaid, but I didn’t know they had an ice cream! Totally going to need to check that out, so thanks for the share! Now these sandos – OMG, YEEEESSSS!! These are a absolutely perfect in the very best summer way! Wish I could just lounge about and eat these all day long! Cheers, friend!

    Never tried Lactaid’s ice cream, but now I need to buy it! I was never a huge fan of ice cream until recently! These sandwiches look awesome!
