A healthy weekly meal plan featuring enchiladas, fresh fish tacos, Mediterranean Grilled Shrimp Quinoa Salad and more!

Hey guys! I’m coming to you on a Saturday because I’ve just joined a new group where we will be creating and sending you guys healthy meal plans, complete with a grocery list each week!

I often get asked about meal planning and I, personally, think it just makes my life so much easier. If I didn’t have kids, it might be a different story because there might be a little more flexibility, but for me, since we do have kids, I can’t just stand around and magically whip up dinner. I have to plan out the week, decide what we’re going to eat (and I don’t cook every night, everyone needs a day or two off), go grocery shopping and then prep and cook. And actually, kids or not, a weekly meal plan is a great idea and money saver!

So, I hope you enjoy this! Try all of the recipes, or try one. Up to you! I’m just hoping these healthy meal plans provide some cooking and meal inspiration for you and your family.

Monday

Butternut Squash Black Bean Quinoa Enchiladas from Lauren Kelly Nutrition.

Prep Ahead: Cook vegetables and quinoa ahead of time. This is already vegan!

Tuesday

Fish Tacos with Strawberry Avocado Salsa from Flavor the Moments.

Wednesday

Open Faced Caprese Sandwiches from greens & chocolate.

Prep Ahead: This comes together super quick – no need to prep ahead!

Thursday

Mediterranean Grilled Shrimp Quinoa Salad from Spoonful of Flavor.

Vegetarian Option: Omit the shrimp for vegetarian.

Friday

Avocado Banana Chia Bread from me!!

Prep Ahead: Make sure you have ripe avocados and bananas for this recipe. If you grocery shop earlier in the week, your avocados and bananas should be ready to go by Friday.

Avocado Banana Chia Bread. Packed with goodness and loaded with avocado, bananas, chia seeds, buckwheat groats, hemp seeds and more! Delicious with butter, or just by itself. You’ve got to try this!

    Interesting choices Alice. I think they are all worth a try. Most appealing to me is the “Mediterranean Grilled Shrimp Quinoa Salad”. Yummy! A weekly meal plan is always a hassle free idea.

    Thank you for sharing this Alice. Finding healthy meal plans is difficult. Everything here looks like amazing simple summer cooking that my kids would even eat!
