Around this time last year, Cassie Yeung shared this recipe on TikTok and it went viral. I’ve heard people say “eat your skincare” and didn’t really think about those words until this year. It’s true – you are what you eat. Do you eat greasy, fast food all the time? Sugar filled drinks and sodas etc? For the most part, you can probably tell what a person eats from looking at their skin. I know there are some exceptions.. people who can eat whatever they want and still have beautiful skin but I have to believe, that for most of us, you are what you eat.

I never really thought about the skin benefits from eating carrots. Yes, eating carrots is very good for your skin. They are packed with beta-carotene (converted to vitamin A), which promotes cell turnover, reduces acne, and keeps skin hydrated. Their antioxidants—including vitamin C—help protect against sun damage, boost collagen, and reduce wrinkles.

Key Skin Benefits of Carrots:
    • Boosts Radiance: The high beta-carotene content helps brighten your complexion.
    • Combats Aging: Vitamin A is essential for repairing skin tissue and maintaining elasticity, which helps prevent fine lines.
    • Sun Protection: While not a substitute for sunscreen, the nutrients in carrots help increase the skin’s resistance to UV damage.
    • Prevents Acne & Dryness: Vitamin A helps regulate oil (sebum) production, keeping skin balanced and preventing dryness

Viral Carrot Ribbon Salad

Equipment

  • vegetable peeler

Ingredients

  • 5 to 7 large carrots washed and peeled
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce low sodium
  • 2 tablespoons brown rice vinegar*
  • 1 to 2 cloves garlic minced
  • green onions finely diced
  • sesame seeds for garnish
  • 1/2 to 1 tablespoon chili crunch depending on how much heat you want

Instructions

  • Using a vegetable peeler, lay a carrot flat on a cutting board and use the vegetable peeler to create long strips (or ribbons) of carrots. Repeat until finished.
  • Place all of the carrot ribbons into a large mixing bowl. Add sesame oil, soy sauce, rice vinegar, garlic, green onions, sesame seeds and chili crunch. Mix with your hands until everything is nicely coated. Taste and adjust any ingredients as needed/desired. Enjoy!
  • To store: the carrots still taste delicious the next day when packed and refrigerated in an airtight container with lid.

Notes

*I love the tang from the rice vinegar. Feel free to use less.
