It’s been a while since I did a what’s going on in my life post. .  and since we’re already in December, about to enter into the crazy holiday season, I thought now would be a good time to catch up on things!

To start, the girls are doing well and my youngest, Madeline, just turned 5 recently.

Madeline can read now and loves playing with her older sister, Phoebe. They spend a lot of time talking about things, dressing up, and now, reading books to each other. When they are not fighting and screaming at each other, it’s quite peaceful and lovely at home.

I can’t believe Christmas is right around the corner and then this year will be coming to an end. It’s crazy how fast this year has gone by. It’s snowed twice here in Wisconsin and it’s cold here. .  which is why I just purchased this. I have to admit, I don’t like the cold weather but it’s so fun to see the snow outside. Ask me again how I feel in February and it will be a different story.

We’re going to renovate our kitchen! The photo above is my dream kitchen. I’m not getting this but just looking at it makes me happy. I’m going to try to do the same back splash and have one large island in the center of our kitchen like this one. Gosh, I love this kitchen so much. I’m on a budget so we’re probably not going to touch the cabinets we have now but it’ll still definitely be something pretty and video worthy.

So, yes, doing more video in 2016 is my goal and I need a proper kitchen to shoot in. I’ll be sure to shoot a before and after to show you guys. The other exciting news is that I will be working with WISC-TV here in Madison.

We visited one day and met with the station’s news director . . more fun news will be coming early next year .  . so stay tuned!!

We’ve been baking. A lot.

The girls love helping me in the kitchen, and our latest obsession: watching videos on YouTube together. We’ll sit and watch fashion/make-over videos, Taylor Swift, most recently, Fifth Harmony and Justin Bieber and we love this channel on YouTube, Everyday Food with Sarah Carey. One day, we sat and watched 8 or 10 of her videos. .  and then immediately went into the kitchen to bake a chocolate chip skillet cookie.

Going into the oven! I love this photo of Phoebe. I think she has the prettiest smile. She is my oldest and is always so sweet and loving. Phoebe helps me so much around the house and with her sister. She still loves reading, drawing and animals. We’ve taken a break from ballet and are trying to find another activity for her to do. We couldn’t decide on one, so this year, she’s not really doing anything . . which I guess for kids, is ok? At least for one semester, right? So, I have my kids in no activities right now. And since winter is right around the corner, I will need to get creative to keep them busy! They have been asking for a dog. We’re going to wait until the girls are a little older. and honestly, it’s me who’s not ready for a pet, or another member of our family.

I just joined Rocksbox, which is like StitchFix but just for jewelry. So far, I’ve received one package with this ring (below), a necklace and earrings. The difference is you get to wear the jewelry and return it whenever you want. Or, you can just purchase what they send you.

I think it’s a cool way to check out new jewelry. I’m totally obsessed with Pure Barre. I go at least 3-4 times a week. I’m definitely going to get my fave instructor a gift, or gift card for the holidays . . he’s partially responsible for helping me to look better in a pair of jeans. What gifts do you give usually for the holidays?

It’s the holidays so there’s peppermint everywhere! You guys need to make my hazelnut hot chocolate. Like now. Like today. Especially if you’re in cold 20 degree weather like I am.

And definitely make this chocolate chip and peanut butter skillet cookie.

I wasn’t going to post this but this photo got so much attention on Instagram and people literally put down their phones and went into the kitchen to make this thing. A few people didn’t have cast iron skillets so used a non-stick pan and a cake pan. Both turned out great!

You definitely need this in your life. With ice cream.

And maybe calories from a cast iron skillet don’t count? Let’s stick with that thought . . at least for the holidays.

Chocolate Chip Skillet Cookie

No mixer required!

Servings: 4 to 6

Ingredients

  • 6 tablespoons unsalted butter room temp
  • 1/3 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 cup + 1 tablespoon all purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup peanut butter chips

Instructions

  • Preheat oven to 350 degrees. Using a large bowl, combine the butter and both sugars.
  • Stir in the egg and vanilla. Add in the flour, baking soda and salt and mix together. Add in the chocolate and peanut butter chips and combine.
  • Transfer cookie dough to a 9 or 10 inch cast iron skillet and bake for about 25 to 30 minutes, or until golden brown and set in the center.
  • Wait patiently for about 5 minutes to cool, or grab some spoons and DIG IN and ENJOY!!

 

I wanted to end on a more serious note.  There’s a lot of craziness and pain going on in the world right now. If I sit still for long enough to really think about everything that is going on, I am saddened and stunned. I also have friends around me fighting for their lives and I am thinking about them everyday. For as long as I am on the earth, I will strive to live my life to the fullest, with joy and passion and still try to see the good and the possibilities. Let’s try to stay positive, y’all. And support and love those who need it.

    There’s nothing like oozing chocolate to make you instantly rush to the kitchen to bake! Yum. This looks amazing Alice and I am totally wishing that I was home rather than work right now (to, um… clean the bathroom of course, the good homemaker that I am! No. Definitely to make a SKILLET COOKIE!). Great to hear about all the news from your end too. Yay, a kitchen renovation!!!! Sounds amazing.     I love this post about your family, it´s beautiufl. My youngest one is 5 too,he turned 5 in May. Such a cute age but lately I´ve realised that my baby boy is now forever gone. He is a big boy now.. 🙂 I love your dream kitcen, just looking at it makes me happy too 🙂 🙂

    Such a happy month! I love your dream kitchen. I’ve been wanting to start doing videos too, and now I’m rethinking my whole kitchen color scheme. Like, the black granite countertops. I love my granite, but it can be a little gloomy. Hope you have fun remodeling!
    Your girls are too cute. And that cupcake is the size of Madeline’s head! My little girl is 5, too!
    And the skillet cookie is beyond words. SO good.

    Exciting things have been (and ARE) going on for you! Happy birthday to Madeline, and remodeling the kitchen is stressful but so exciting! We went through one 6 years ago and it was the best thing we ever did. Your dream kitchen is amazing!! Love the photos, AND this cookie cake. 🙂

    Oh Alice, I love everything you said in this post. I can’t believe how quickly this year has gone by too! Your girls are so adorable, hope Madeline had an amazing birthday! 🙂 Love love love this skillet cookie and that you made it with your sweet girls.
