Italian Grinder Potato Chip Snack Bag

Italian Grinder Potato Chip Snack Bag! Delicious, no fuss and completely versatile, this is like marrying an Italian grinder sandwich with potato chips! So good!

This summer, I’m all about easy, no fuss recipes. When I saw the Snack Sensei making his Elote Loaded Kettle chips, I was inspired to come up with a version for myself. I mean, what could be easier and more delicious than a bag of chips with loads of toppings?! 

This snack reminded me of a walking taco. “Walking tacos are a popular and convenient twist on traditional tacos, served right inside a single-serving bag of chips. They are especially favored at parties, festivals, and gatherings for their ease of eating and minimal cleanup.”

Italian Grinder Potato Chip Snack Bag

This was purely inspired because I was craving an Italian Grinder sandwich and wanted to make this. I didn’t know what to call this recipe, so came up with the above name. Try this, or a version that you come up with on your own and let me know what you think!

Italian Grinder Potato Chip Snack Bag

Ingredients

For the Italian grinder salad/slaw:

  • 1/2 head iceberg or romaine lettuce chopped fine or shredded
  • 3 tablespoons mayonnaise  + more if desired
  • 2 tablespoons red wine vinegar + more if desired
  • 1 teaspoon dried oregano or Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes optional
  • salt and pepper to taste

For the Potato Chip Snack Bag:

  • 1 bag potato chips any kind*
  • assortment deli meat: turkey, mortadella, salami, prosciutto chopped or torn
  • provolone cheese** chopped or torn; optional
  • tomatoes chopped
  • pickled red onions see below for recipe link
  • pepperoncinis optional
  •  jalapeños optional
  • olive oil extra virgin

Instructions

For the Italian grinder salad/slaw:

  • Mix together all of the ingredients. Taste and adjust any ingredients as desired. Make the grinder salad as outlined but then change it up according to your taste! Want more vinegar or mayo? Add more. Want more chopped lettuce? Add more. Do what you like!

For the Potato Chip Snack Bag:

  • Open potato chip bag: cut open from the side of the bag (long ways) and then open each end so the bag completely opens and is a flat square. Spread the chips out as your base and start piling on the toppings!
  • Add the Italian grinder salad slaw over the top. Top with the torn deli meats. Add cheese (if using), the tomatoes, pickled red onions and/or pepperoncinis, jalapeños and drizzle lightly with some olive oil. I don't think it's needed but if you want to season more, season with salt and pepper. Serve, share and enjoy!

Notes

*I recommend getting chips with ridges or crinkle cut!!
**or you can use freshly shredded Parmesan cheese

    I love this idea! Its so creative and perfect for when I want a hearty snack but dont feel like cooking. The Italian grinder flavors are spot on, and its super easy to assemble. Definitely trying this at my next gathering!
