I’ll admit it.
For a long time now I have been obsessed with the Pumpkin bread box mix from Trader Joe’s. So much so that I would try a homemade pumpkin bread recipe, trash it, and then go back to this box mix.
Until now.
I love Food52. The recipes are amazing, the photography beautiful and they have a pretty fabulous online community. So when I saw this post from Giulia Melucci titled, “The Pumpkin Bread I Can’t Stop Eating”, I had to give it a go.
I changed a few things from the recipe. . used apple sauce instead of chopped apples and used pecans instead of walnuts since I had half a bag leftover from this. I also did not have whole wheat flour so used 100% all-purpose flour here but you’d better believe I am making this again. This time, with whole wheat flour. So, don’t take my word for it. Try Giulia’s recipe yourself. It’s pretty damn good.
I loved the color of my pumpkin bread batter. So pretty. Pop it in the oven for about an hour and 20 minutes and enjoy!
RECIPE IS HERE on Food52.com.

#TwelveLoaves-Keep it Simple!
We enjoyed a delicious month of December with our Holiday Breads. January #TwelveLoaves is here and we are going to Keep it Simple! Choose a recipe that is not overly complicated, whether in technique or ingredients and then share your January Holiday Bread (yeast or quick bread). Let’s get baking!
If you’d like to add your bread to the collection with the Linky Tool this month, here’s what you need to do!
1. When you post your Twelve Loaves bread on your blog, make sure that you mention the Twelve Loaves challenge in your blog post; this helps us to get more members as well as share everyone’s posts. Please make sure that your bread is inspired by the theme!
2. Please link your post to the linky tool at the bottom of my blog. It must be a bread baked to the Twelve Loaves theme.
3. Have your Twelve Loaves bread that you baked this January 1, 2014, and posted on your blog by January 31, 2014.
#TwelveLoaves is a monthly bread baking party created by Lora from Cake Duchess. #TwelveLoaves runs so smoothly thanks to the help of the lovely Paula from Vintage Kitchen Notes and Renee from Magnolia Days.

Happy New Year, Alice!!! We LOVE, love pumpkin bread around here…so this is one recipe I must try before Nick goes back to college. I was SO glad we got to meet in person this year…one of the highlights of 2013. Wishing you many blessings in the coming year. xo
Me too, Liz! Meeting you and Nancy at IFBC was one of the highlights from last year!!! Cheers to you and best wishes for a fabulous 2014!
Love Food52 and all their delicious ideas & snaps. What I fully appreciate about great recipes is finding the courage to translate and (eventually) make them your own. Happy Baking for 2014!
Hey Alice. . totally agree. . with this one though, I had to try the recipe as is and share it. . but you’d better believe I will be playing around, testing and developing one of my own! Cheers and Happy 2014!
Your bread does have a lovely color. And oh those chunks of pecans too. I can see how you would make this again and again.
Best to you for the coming year and I hope it is filled with much love. xoxo
Pumpkin Bread with apple sauce. A great combination of tastes.
With Twelve Loaves I’ve so many great breads that it’s hard to choose favourites. Your anyway is among them.
Happy New Year.
I hear you on the use of boxed mixes, Alice, because I did the same for brownies for the longest time. I just couldn’t seem to achieve the same rich chocolately level we wanted without the box. I finally found the magic recipe last year and haven’t bought a box since.
Your pumpkin loaf is absolutely gorgeous! I can’t wait to try it.
Alice, your pumpkin bread and photos are just beautiful. And of course I’m coveting your loaf pan =) I’m so privileged to be baking along with such a fabulous group, and glad to have gotten to “know” you! Happy New Year.
I don’t have a Trader Joe’s here and never tried a box mix pumpkin bread. Theirs must be great if you love it so! But now, you have to keep baking this wonderful loaf:)) So lovely for our Keep it Simple challenge. Happy New Year, dear Alice. xx (hope you feel better soon!)
Gorgeous bread, Alice! LOVE the color and texture. I’m like you. I’ve tried various pumpkin bread recipes, but my son really prefers the breads out of a box! I bet this beauty will change his mind! Looking forward to more baking adventures together! Happy New Year to you and your family! : )
We don’t have a Trader Joe’s here either, but after seeing your pumpkin bread I know that I won’t need to try the mix. It has such a beautiful color and it looks so moist. I am a big fan of pumpkin bread any time of the year, and I have multiple cans of pumpkin in my pantry to prove it ;).
Happy 2014!
Trader Joe’s is coming to Denver in Feb 2014– almost here! But until then I will enjoy your recipe and this gorgeous pumpkin bread. Looking forward to see what 2014 brings on your blog, Alice. Happy New Year!
This pumpkin bread looks so incredibly moist and tasty! Can’t wait to make the most of so much leftover pumpkin!
I never did try the boxed mix but it was reeeally calling my name! I would love to try this recipe and savor the flavor. I’m not a huge fan of pumpkin but in things like this bread, it would be great. Maybe even a piece or two for stuffed French toast!
I love pumpkin year round, it’s so versatile. This is a fantastic recipe Alice! Olive oil, whole wheat flour, spices… I just love it. Thanks for sharing this recipe! I’m still trying to figure out how to bake in a 100sq feet kitchen…
I love the idea of adding apples and pecans to pumpkin bread!
Hey girl, I LOOOOOVES me some pumpkin bread and I’m always collecting new recipes so this is going onto my must-bake list. The colour and texture of your loaf are absolute perfection. I was reading through the comment feed and I agree with you and Liz – meeting you ladies was one of the best things I did in 2013. Heck, I think blogging and everything related to it was and continues to be the best thing ever. I know that we’re going to be friends for life. I can’t wait until I see you again!
