Open Faced Smoked Salmon Tomato Sandwich with cottage cheese, hard boiled egg, dill, cornichons and more! This is one of the best things I’ve eaten this month!

Friends, tomorrow is New Year’s Eve! Where did the year go?! I seriously can’t believe it! I’m back home from Dallas. There used to be a time that I loved flying. . now, not so much. Traveling during the holidays is especially worrisome because of the weather (east coast), delays, overbooked flights and crowded airports. I must say however that even though my flight back home was rough (delayed four times and several gate changes), everyone seemed cheerful and respectful of one another.
Before I left, I tried this. One of Courtney Cook’s creations and what made her go viral. I’ve been stuck on her page for the past few days, as I’m sure the rest of the country has. . anyway. . watching her last night led me to Danielle’s page and to this video, which is the inspiration for my sandwich today!
Friends, if you like smoked salmon, you simply must make this! It’s so good!
Open Faced Smoked Salmon Tomato Sandwich
Ingredients
- 1 slice toasted bread I used miche sourdough
- 1/2 cup cottage cheese or you can use cream cheese
- 1/2 tomato sliced
- salt and pepper
- smoked salmon
- hard boiled egg sliced
- olive oil extra virgin
- cornichons sliced in half lengthwise
- capers
- fresh dill
Instructions
- To make the sandwich: spread the cottage cheese over the toasted bread. Top with tomato slices, season with salt and pepper. Top with smoked salmon, eggs, dash of olive oil, cornichons, capers, fresh dill and pepper. Slice and enjoy!!
