Bibb Salad with Dijon Vinaigrette Dressing. Sometimes the best salads are the most simple. Crisp, light and refreshing Bibb lettuce dressed with the most delightful Dijon Vinaigrette dressing.

I often get inspired when dining out at restaurants. This salad is inspired by a delicious and simple salad I had recently at Le Crocodile Restaurant in Brooklyn, NY. Sometimes I just need some greens and on this particular night, I wanted a big bowl of greens and this salad was perfect! This salad actually wasn’t even on the menu. I asked my server for a light salad and she mentioned they had a Bibb salad with a simple vinaigrette. It was so perfect and hit the spot.

Bibb Salad with Dijon Vinaigrette Dressing

Bibb lettuce, Boston Bibb or butterhead lettuce. .  it’s all the same thing. I love the light, buttery flavor and I can easily eat an entire head of Bibb lettuce and not feel guilty about it. “Bibb lettuce is a type of butter lettuce that is small, round, and tender with a mild flavor. It is named after John Bibb, a 19th century American grower who developed the variety. Bibb lettuce has a soft, buttery texture, with the outer leaves being softer and the inner leaves being crunchier and sweeter. Bibb lettuce can be used in salads, wraps, and side dishes. It pairs well with blue cheese, shaved carrots, buttermilk dressing, vinaigrettes and pecans. It can also be used in BLT sandwiches or strawberry salads with balsamic vinegar, olive oil, and honey!” Delicious!

Bibb Salad with Dijon Vinaigrette Dressing

This salad is super simple, light and refreshing. If wanting to add more, some thinly sliced cucumbers and tomatoes would be a lovely addition!

Ingredients

For the Dijon Vinaigrette:

  • 1/2 tablespoon Dijon mustard
  • 1 to 2 tablespoons lemon juice or apple cider vinegar + more if desired
  • 1/2 tablespoon shallots diced fine
  • 1/2 cup good quality olive oil extra virgin
  • 1/2 to 1 tablespoon Parmesan cheese grated
  • salt and pepper to taste

For the salad:

  • 1 head Bibb, or Butterhead lettuce rough chopped
  • 3 to 4 radishes thinly sliced

Instructions

For the Dijon Vinaigrette:

  • Add the Dijon mustard to your bowl or mason jar, add the apple cider vinegar and shallots and slowly whisk in the olive oil until emulsified. Add the Parmesan cheese and season with salt and pepper to taste. Mix again, taste and adjust any seasonings as needed.

For the salad:

  • Using a large mixing bowl, toss together the Butterhead lettuce and radishes and drizzle some of the Dijon Vinaigrette over the top (you won't use all of it so don't pour it all in), toss together, plate and enjoy!

Notes

Depending on how much dressing you like in your salads, you should have enough dressing (more than a 1/2 cup) for 2 to 3 heads of Butterhead lettuce.
I always like to make more dressing, so I can store in a mason jar for another salad. If using the dressing the next day, you can just leave on your countertop in the sealed mason jar. If planning on using over the next few days, store in the fridge and leave out on the countertop about 30 minutes before you want to use. Whisk up and enjoy!
