Bibb Salad with Dijon Vinaigrette Dressing

This salad is super simple, light and refreshing. If wanting to add more, some thinly sliced cucumbers and tomatoes would be a lovely addition!

Ingredients

For the Dijon Vinaigrette:

  • 1/2 tablespoon Dijon mustard
  • 1 to 2 tablespoons lemon juice or apple cider vinegar + more if desired
  • 1/2 tablespoon shallots diced fine
  • 1/2 cup good quality olive oil extra virgin
  • 1/2 to 1 tablespoon Parmesan cheese grated
  • salt and pepper to taste

For the salad:

  • 1 head Bibb, or Butterhead lettuce rough chopped
  • 3 to 4 radishes thinly sliced

Instructions

For the Dijon Vinaigrette:

  • Add the Dijon mustard to your bowl or mason jar, add the apple cider vinegar and shallots and slowly whisk in the olive oil until emulsified. Add the Parmesan cheese and season with salt and pepper to taste. Mix again, taste and adjust any seasonings as needed.

For the salad:

  • Using a large mixing bowl, toss together the Butterhead lettuce and radishes and drizzle some of the Dijon Vinaigrette over the top (you won't use all of it so don't pour it all in), toss together, plate and enjoy!

Notes

Depending on how much dressing you like in your salads, you should have enough dressing (more than a 1/2 cup) for 2 to 3 heads of Butterhead lettuce.
I always like to make more dressing, so I can store in a mason jar for another salad. If using the dressing the next day, you can just leave on your countertop in the sealed mason jar. If planning on using over the next few days, store in the fridge and leave out on the countertop about 30 minutes before you want to use. Whisk up and enjoy!
