Asian style chopped salad with chicken and a sesame ginger dressing!! You’re going to want to make this dressing in bulk, it’s so good!

I can’t believe we are already in July. We spent the 4th in Stone Harbor. I really love that town. The beach is great, the sand is smooth and the town is safe and family friendly. I shared our experience and adventures on my IG stories and a lot of you asked if I would recommend Stone Harbor and where we stayed. The answer is yes! In fact, we will probably go back again next summer. Everything is within walking distance and they have a lot of great restaurants, shopping and ice cream shops.

The first summer after we moved to PA, we went to Wildwood, PA. Back then, I feel like the boardwalk was more fun and safe. We did go just for a couple of hours to play some games and eat pizza but honestly, it was dead. Next time, we will just stay in the Stone Harbor and Cape May area. It’s so beautiful. My daughter wants to buy a beach house over there. Ha! The houses there are crazy expensive so I told her she needs to get a really great job!

We are coming off of another really hot few days here in PA. Our AC is broken again.

Asian Style Chopped Salad with Chicken

This summer has been hot. I don’t know about you but I’ve been staying away from turning on the oven and sticking to easy to whip up recipes that don’t get my kitchen hot. This dressing is incredible and is so delicious. My only note: you may want to make this in bulk and drink it. The salad can be whatever you like. I just used what I had at home. I love adding romaine or other greens to my chopped salad along with the cabbage. It also compliments the cabbage. To save time, use store bought rotisserie chicken or you can simply boil or poach your chicken.

Invest in a great mandolin and box grater. These tools are so helpful when making recipes like this. Also, if you feel like this won’t fill you up, I think adding rice noodles would also be delightful. Make it a cold noodle salad.

Asian Style Chopped Salad with Chicken and a sesame ginger dressing

Ingredients

For the dressing:

  • 2 tablespoons avocado oil
  • 2 tablespoons sesame oil
  • 2 tablespoons brown rice vinegar or any rice vinegar
  • 2 tablespoons coconut aminos or low sodium soy sauce
  • 1 to 2 tablespoons maple syrup*
  • 2 cloves garlic minced
  • 1 tablespoon freshly grated ginger
  • toasted sesame seeds optional

For the salad:

  • 3 to 4 cups shredded green cabbage
  • 1 to 2 cups chopped romaine lettuce
  • 1/2 cup shredded carrots
  • 2 cooked chicken breasts** shredded, cubed or diced
  • 1/3 cup green onions finely diced
  • 1/2 cup sliced almonds for garnish

Instructions

  • For the dressing: Whisk together all the ingredients. Taste and adjust anything as needed.
  • For the salad: Using a large mixing bowl, mix together all of the ingredients. Drizzle the sesame ginger dressing over the top (you don't have to use all of it at once), mix well and enjoy!

Notes

*if using coconut aminos, 1 T of maple syrup will work. If using soy sauce, you will probably want to add 2 T of maple syrup
**you can also just use a store bought rotisserie chicken, or you can simply boil, poach or pan fry your chicken.
