Spring is right around the corner and – although I hate saying this – I’m going to have to get out of my sweatshirts and joggers and put on shorts, dresses and dare I say: my swimsuit. For me, eating lighter isn’t about losing weight. It’s about feeling better and feeling good in my clothes. I could just go on eating rice everyday as I have been but now that March is here and April and summer is rolling around the corner, I’m breaking out the lighter recipes.
Turkey Lettuce Cups with Green Goddess Dressing
I’m sure we all tried the viral green goddess salad by Baked By Melissa. I know I did. I fell in love with her green goddess salad dressing. It’s divine. I did however want to make it slightly creamier so I added half of an avocado.
I’m all about the sauce, dressings or condiments. For me, it brings everything together. The saucier, the better in my opinion. I give you more dressing options below to enjoy with these turkey lettuce cups.

Turkey Lettuce Cups with Green Goddess Dressing
Ingredients
For the Turkey Lettuce Cups:
- 1 tablespoon olive oil extra virgin
- 1 lb. lean ground turkey
- 1 small onion chopped fine
- 1 or 2 cloves garlic minced
- 1 teaspoon fresh ginger grated, optional
- 1 zucchini chopped fine
- 1 package (8 oz) mushrooms shiitake or cremini, sliced or chopped fine
- salt and pepper
- Bibb lettuce
For the Green Goddess Dressing:
- juice of 2 lemons
- 1/4 cup olive oil extra virgin
- 2 tablespoons rice vinegar
- 2 cloves garlic
- 1 small shallot
- 1/3 cup chives optional
- 1/2 ripe avocado optional
- 1/4 cup pecans, walnuts, cashews or nut of choice
- 1 cup fresh torn basil leaves
- 1 cup baby spinach
- 1/3 cup nutritional yeast or parmesan cheese
- 1 teaspoon kosher salt
Instructions
For the Turkey Lettuce Cups:
- Heat the olive oil in a large sauté pan over medium high heat. Add the lean ground turkey and cook until no longer pink. Add the onions, garlic, ginger, zucchini and mushrooms and cook until tender, for about 4 to 5 minutes. Season with salt and pepper and remove from heat.
For the Green Goddess Dressing:
- Add all liquid dressing ingredients to a blender, then add the dry dressing ingredients and blend until smooth.
- To serve: place some of your cooked turkey mixture into a piece of lettuce and top with some of the dressing. Enjoy!
