Happy Saturday everyone! We are officially on Spring Break! This one kind of just snuck up on me and we are not going anywhere. We are staying put here at home and will just relax, play with Cinnamon and go out to different places in Madison. Honestly, I was thinking of taking the girls to Chicago or Minneapolis for a few days but then I had reservations about leaving Cinnamon at the pet hotel. It’s funny, with our first cat, I would have dropped him off in a heart beat.
But Cinnamon #2 is different. He’s a part of our family now and, unless it’s for an extended period of time, we’ll just figure things out and keep him here at home. I had heard that some pets act up once they get home (cats in particular). And I certainly don’t want Cinnamon kicking litter everywhere or whatever when he returns home. Anyway, we’ll probably still do a quick day trip somewhere but I’m sure the week is going to fly by!
So, who out there has an Instant Pot? I feel like everyone and their brother has one now and I’m wondering if I need one? I have so many appliances it’s not even funny. Well, All Clad just came out with an all in one type cooker, which I am getting next week, so we’ll see if I still need anything else after this one. I mean, I have a multi-cooker, pressure cooker, slow cooker. . what else do I need?!
I can finally start to see signs of spring and nice weather and I am so excited! I still have my slow cooker out (and will be sharing a fabulous recipe on Monday!) but I am also looking forward to spring produce and lighter meals. Prep Tips: The veggies can all be chopped in advance. This stew can be made in either the pressure cooker or slow cooker!

Wednesday
Lemony Pesto Pasta with Asparagus from me! This is one my of my absolute favorite pasta dishes for spring! You can’t beat pesto with asparagus and pasta! I hope you give this dish a try!
Thursday
Healthy Mexican Casserole from Lauren Kelly Nutrition.
Friday
Pesto Gnocchi with Sausage, Asparagus, and Mushrooms from Flavor the Moments.
Prep Ahead: The filling may be made in advance, then just assemble and bake the day of!

You are definitely right about cats and staying at boarding facilities. The good thing about cats is that with plenty of food and water someone can check on them and they will be a-ok. I’d recommend a trusted pal to come in and play with him and make sure he has food and a clean litter box . They always do better in their own environment. I love stay-cations! I mean I love traveling but there really is no place like home <3
