Healthy Weekly Meal Plan 2.11.17 featuring a Thai Coconut Pot Sticker Soup, Slow Cooker Mac and Cheese, Mexican Chicken and Quinoa Stuffed Peppers and more!
Happy Saturday everyone! This weekend, it’s all about my family. I’m not working at all! Hooray! We’ll be selling girl scout cookies, going on playdates and bowling and prepping for Valentine’s Day.
Anyone else love the holidays more because of their kids? Or, does it stress you out more? I love Valentine’s Day for the kids and will be making heart shaped goodies for their classes. The girls and my husband went to their Father Daughter Dance at the high school last night. I think I have the only girls on the planet that don’t like getting their hair done. It’s always a fighting match when I want to curl their hair. Really?! and then, they didn’t want to take a photo before they left the house. My kids really drive me crazy sometimes. . but then, I was able to get a ton of work done and clean the house while they were gone. I really love an empty house!
They came back all happy, with necklaces and a photo that they took at the dance so I do have a memory from last night. That’s all I wanted.
I hope this week’s mea plan can provide some great recipe and dinner inspiration! Take a look down below and if you try anything, let me know how it goes! I’ll be back Monday with a fantastic Chicken Pot Pie recipe and a cookbook giveaway from America’s Test Kitchen!
