As a wife, mother, blogger, business owner, social media fanatic, chauffeur, house keeper, ballet bun maker, and favorite blanket finder, I feel like I am constantly doing something. I’m all about organization and planning as much as possible. Now, don’t get me wrong, there’s still plenty of spontaneity in my life. I just feel like I have a better handle on things when I am organized.

Especially when it comes to meal planning. Do any of you meal plan?

For me, it’s the only way I can stay sane and ensure I feel good about the food I am feeding to my family. There are so many different ways to go about it too. I know a lot of working parents meal plan on the weekends: plan out the menu, grocery shop and prep the meals. I am also a big believer in meal planning efficiently. What do I mean by this? Plan out meals that share some of the same ingredients that week. So, if you are buying butternut squash, for example, you can be roasting butternut squash for two meals. Or, you can buy a whole chicken and use the thighs one night and the chicken breast on another night later that same week, or make chicken soup or stock.

Since it’s fall and the weather is getting cold, here’s a week of comfort food! Weekend: Prep, cut and store all of your veggies.

Beef Stroganoff

Monday: Beef Stroganoff (this is a reader favorite!) and roast your butternut squash to prep and have it ready for Tuesday.

Butternut Squash Turkey Chili

Tuesday: Butternut Squash Turkey Chili! This chili recipe is a family favorite! The roasted squash on top is just for fun (no need to add this if you don’t have time). Take the roasted butternut squash cubes that you roasted the night before and add them into this chili for a festive, fall inspired chili.

Baked Mac and Cheese

Wednesday: Lunch: Crunchy Kale Salad + Baked Mac and Cheese for dinner! Sneak some veggies in here for nutrition and texture!

Roasted Butternut Squash Pizza

Thursday: Roasted Butternut Squash Pizza + prep chicken and veggies for Friday! This pizza is absolutely delicious! Save time and just buy fresh store bought pizza dough!

Friday: One Pan Roasted Chicken! Be sure to read this recipe entirely on Wednesday or Thursday! This one does require prep on Thursday night!

    These are all great meals, Alice. My favorite is the beef stroganoff! I don’t know I f I can wait till next Friday to make the one pan roast chicken with root vegetables. OMG! Meal planning is definitely important and makes a busy life more manageable. ? ?

    Yum! These recipes all look amazing. I love fall. Root vegetables and squash galore. Can’t wait to try them. These paper goods are still charming – will I ever get over my love of “old fashioned” pen and paper lists and cards? I hope not. The ‘I’ve got it together’ series is super cute. Specifically the grocery/recipe component. I LOVE having a physical grocery shopping list. Thanks for this!

    Sounds wonderful!! I’ll have to try this on weight watchers :). I love spaghetti squash so I usually poke a hole in it and cook it in the microwave about ten minutes. That gets it half way done. Then I finish by roasting it cut side down in the oven because it has better flavor!!

      Hi Gloria! I do have a print option! This post, however, was more of a round-up post, with multiple recipes so you have to click on each link and then you would see the recipe card (and you can print it) for each one. Hope that makes sense!

    Well I thought I had bought ground turkey but instead bought sausage!! How could I have done that!! And thank you for the brown rice link, and yup that was the one!! Anyway I did make this tonight but instead of turkey I used ground beef! It was all I had and I wanted to make this so bad. But guess what – it was fantastic!! I know it would have been healthier with the turkey but this was, as my husband said — give it two yums!!! Thanks again

    Never thought to put roasted tomatoes into a salad, but of course it goes so well with the roasted squash. I added roasted beets since I had some. Don’t have pine nuts; subbed pecans. For the dressing, I didn’t have orange/juice and the stores don’t yet have frozen or fresh cranberries, so I reconstituted dried with hot water. Made my own balsamic dressing with a bit of Dijon mustard. Added strips of grilled tempeh (I’m really not obsessed with protein, but just wanted to use it up).

    Wow that looks delicious. I love spaghetti squash. I know what you mean about exploding spaghetti squashes — I cooked one in my microwave and it exploded, blew the door open, and just missed my baby in the high chair! I had poked the skin, but don’t think I stabbed it deep enough. I had to get a new microwave – it was totally destroyed. So I always cut them in half now…

    this looks so delicious! My husband hates eggs, so I never make Frittata’s which is a shame. Have you tried freezing this or something similar. I’m thinking for my breakfast or lunch, I could make ahead. Let me know, much appreciated!
