Hey guys! Happy Saturday!
I’m still in NYC heading home later today. . I’ve had the craziest week you guys. . good and bad. If you follow me on snapchat or instagram stories, you know I’ve been here in NYC at the Better Homes and Gardens Stylemaker event! It was so much fun and the highlight of my week here! In other news, I spilled hot coffee all over my laptop. . yeah, I’m an idiot. My computer is dead for now. When I get home, I need to figure out how I’m going to fix my baby. No more drinks of any time near my laptop while I am working. Lesson learned.
Last night, I ate at Barbuto with my friends. Baubuto, if you don’t know it, is Jonathan Waxman’s restaurant and the food there is beyond delicious. Like, the best roast chicken I have ever had (on the menu look for: pollo al forno: jw chicken & salsa verde). We also had the bucatini alla amatriciana and the verdure: escarole, swiss chard, garlic & chili!!!! SO GOOD you guys! Next time I’m in NYC, I’m definitely going back!
Today, we’re going to hit Levain bakery for a chocolate chip cookie and then have brunch in the Upper West Side. I love NYC. . . But I’m also excited to get back home to see my family. . some crazy stuff happened with Madeline that I’ll tell you guys about later .. I’m ready to get home and get back to work! It’s going to be a great week and I love that fall is finally here! This week’s healthy meal plan menu is packed with butternut squash, pumpkin, leek and potato soup and more!!!! Chicken Black Bean Pumpkin Chili from greens & chocolate. Pumpkin chili?! Oh my!!! I’m all in! I can’t wait to try this chili!

Leek and Potato Soup from me! This is one of my family’s favorites! I literally make this every week in the fall and winter; my kids love this soup. If you’ve never made leek and potato soup before, you are in for a treat! This soup is foolproof! No joke!
Prep Tips: If you are not lactose intolerant, you can use heavy cream in place of the Lactaid (lactose-free cow’s milk). With heavy cream, I start with just a ½ cup. Feel free to add more if desired.
Easy Minestrone Soup from Lauren Kelly Nutrition. Nothing says comfort more to me than minestrone soup! You’ve got to try this one!
