Giada’s Fish Tostadas with Citrus Salsa! Fresh, easy to make and creative! The fish has a toasted quinoa coating and is absolutely delicious!

A week ago, I was in Miami attending the best breakfast of my life. We were poolside at the Loews Hotel and the breakfast was hosted by the TODAY Show. Al Roker himself was there, along with Giada, Geoffrey Zakarian, Alex Guarnaschelli, Marcus Samuelsson and more.

Everyone was in town for the South Beach Wine and Food Festival, which, as Anne Burrell said, is like spring break for chefs. Everyone is there to have fun, relax, eat, drink and see friends.

After getting cocktails and mingling for a bit, Giada came over and started cooking. Oh and by the way, the whole thing was live and televised on national TV. A friend of mine in Dallas said she saw me, maybe just my back, or the side of my dress on TV. 😛 We were there in the background just watching. It was fabulous.

A crowd, outside of the group of people attending the breakfast, had gathered. I mean come on, anytime you have all of those celebrity chefs in one place, a crowd is sure to gather. After Giada and Al were done shooting, they passed around the tostadas, or I should say, the tray went out to the crowd and they were gone in a split second. I know because I saw the whole thing. Hands grabbing and an empty tray.

I didn’t get a tostada but I got a photo with Giada instead and we chatted for just a few minutes.

She was so sweet and she’s absolutely beautiful in real life. I mean, she’s pretty on TV, obviously, but she’s beautiful in real life. And I was actually taller than her, because I was wearing heels. I’m only 5 2″.

The breakfast was so fun and on our way out, we got swag bags. I watch the TODAY Show everyday and always pay close attention when the cooking segment comes on. . I’ve always wanted one of those aprons that say TODAY Food. . and I got one. Happy day!!!

And because those tostadas looked so good, I had to make them for myself at home. I absolutely love the quinoa and I love that Giada used the quinoa to coat the fish. Brilliant!

These are so delicious! You have to try these! I’ll be back soon with the rest of my trip to Miami .. because this was just breakfast on Day 1.

Giada's Fish Tostadas with Citrus Salsa

Ingredients

For the avocado spread:

  • 2 avocados
  • 1/2 teaspoon salt
  • 1 teaspoon lime zest from 1 large lime
  • 4 teaspoons lime juice from approximately 2 limes

For the citrus salsa:

  • 2 pink grapefruit segmented
  • 1 serrano chile sliced into thin rounds
  • 1/4 cup chopped cilantro
  • 1/2 teaspoon salt
  • 1 small radicchio sliced into thin ribbons

For the fish:

  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon grapefruit zest from 1/2 a grapefruit
  • 1 pound striped sea bass bones and skin removed, cut into 12 small fillets
  • 2 tablespoons vegetable oil
  • 1 cup tricolor quinoa

For the tostadas:

  • 4 to stadas
  • Hot sauce optional
  • Toasted quinoa optional
