Fancy Avocado Toast

Fancy Avocado Toast. Avocado Toast just got fancy. Mix up the toppings and try something new! From pomegranate arils to roasted butternut squash to chia seeds. .  everything can go on there. Get creative!

This past weekend was crazy and packed. I am barely standing and might have to load up on two smoothies today. Energy boosting ones. Yesterday, I shot 3 new videos for the blog (coming soon!) and I’m getting ready for my next local TV station video shoot tomorrow . . I love being in front of the camera but the prep time and getting everything organized is so time consuming. Not to mention testing the recipes. Sooooo, I’m keeping this post short today!

Yes, I’m still on the healthy train. .  and I haven’t been really trying but I’ve found myself eating hardly any meat these days. When I eat things like this, I think being a vegetarian is completely possible.

Avocado toast you guys. We’re getting fancy today.

My friend Chi came over last week and I made some simple avocado toast for her. I pick up one of those bags of avocados from Costco . . I feel like once they all get ripe, you either make lots of guacamole, avocado toast, throw some into salads or wraps or just eat them plain. Regardless, I’m eating avocados for like 4 to 5 days straight (if they last for that long).

I wanted to get a little creative with the toppings here. .  because hey, avocado toast can be fun! Mix it up! Throw something outrageous and delicious on there!

You might think the pomegranate arils are a weird choice. .  but try it! I absolutely loved the crunch, texture and sweetness they added to this toast! This was seriously so delicious!

And I got the idea of adding roasted butternut squash and the pomegranate arils after seeing IMG_2589

And the egg. Well, this one is just a no brainer. I devoured this one first. I love eggs so much.

Fancy Avocado Toast

I like to add salted butter on my avocado toast, which might seem unnecessary and indulgent. This is completely optional but if you've never tried it, you should.*

Course: Breakfast or Snack
Servings: 4

Ingredients

For the toast:

  • 2 to 3 ripe avocados mashed with a fork
  • kosher salt to taste
  • pepper to taste
  • fresh lime juice from 1/2 a lime
  • 4 slices whole wheat bread toasted
  • butter optional

For the toppings:

Butternut Squash Toast:

  • fresh raw red cabbage, shredded
  • roasted butternut squash
  • pomegranate arils

Shaved Carrot Toast:

  • carrot stands shaved using a vegetable peeler
  • tomato slices

Healthy Radish Toast:

  • chia seeds
  • hemp seeds
  • fresh raw radish slices

Egg Toast:

  • fresh raw red cabbage, shredded
  • fried egg
  • salt and pepper

Instructions

  • Place avocados into a bowl, mash with a fork and season with salt and pepper. Squeeze on fresh lime juice from half a lime (maybe a little less). Mash and mix together.Taste and adjust any ingredients as needed.
  • Butter each slice of whole wheat toast (optional*) and top with a generous amount of mashed avocado.
  • Top each toast with the toppings of your choice and devour immediately.

    Oh Wow – Alice you sure did fancy up avocado toast! Not only do these look gorgeous but the combinations sound delicious! I am especially intrigued by the butternut squash and the pomegranate arils combo! And…I checked out @whatimholding – those are some pretty hands indeed!

    Good luck with all your video shoots! Now that you’re in the big time, we’ll have to say we knew you when. But it’s definitely fun doing videos. It’s the blog wave of the future! And whoever’s kitchen you were using to film in yesterday is a very lucky person. I need that kitchen!

    I don’t think I could ever be on TV, Alice! I’d probably just freeze! & can you believe I’ve never had avocado toast! I’ve only had it in guac and sushi! Love the topping ideas – especially the butternut squash! Can’t wait to expand my horizons!

    I am all about avocados lately. It’s weird because I used to not like them. Now I can’t enough of them! Love that you used them to jazz up boring toast! I’m definitely doing this for breakfast! Good luck with your shoots! Your videos are always great!!

    I am a great lover of avocado toast. I totally get you on adding salted butter – I’ve done that before and it totally elevates the butteriness of the avocado (plus adds that salty deliciousness) to another level! Pomegranate arils are a great addition – i tend to top my guacamole with them these days, alongside a drizzle of lemon oil. Such pops of sweetness and crunch! Yay for a delicious edition of the ‘healthy train’ 😉 Happy new year lovely! xxx
