Soba Noodles with Edamame and Green Onions for a Healthy #SundaySupper!

So, after all the rich foods, chocolate and sweet treats you may have devoured last week (I certainly did), something lighter and more on the healthier side might be appealing to you right now.  Out of all the different kinds of foods out there, I really feel like Japanese food is one of the healthiest. I mean, we’re talking fish, buckwheat noodles, marinated vegetables, sushi, chicken teriyaki. . what could be better?

Soba Noodles with Edamame and Green Onions

Ingredients

  • 4 ounces soba noodles Japanese buckwheat noodles
  • 1 cup frozen shelled edamame green soybeans
  • 2 tablespoons low sodium soy sauce
  • 1 1/2 tablespoons fresh lime juice
  • 1 1/2 tablespoon sesame oil
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped green onion
  • Sesame seeds to sprinkle on top
  • For a spicy alternative mix in: 1 1/2 tablespoons sweet chili sauce or sriracha sauce

Instructions

  • Cook soba noodles according to package directions, add the edamame for last 3 minutes. Rinse with warm water; drain well and set aside.
  • Combine 2 tablespoons soy sauce, lime juice, and sesame oil in a medium bowl. Whisk well.
  • Pour the soy sauce mixture over the soba noodles and mix in the cilantro and chopped green onion. I prefer using disposable plastic gloves so I can mix with my hands. Sprinkle with sesame seeds and garnish with more green onion (if preferred) and serve!

    Anyway hats off to you Alice for this lovely and light rendition of buckwheat noodles. How clever of you to add lime juice instead of ponzu sauce. Love the addition of cilantro, too.

    Soba noodles were one of my favorites discoveries this year. I simply love them. This is exactly the kind of recipe I would make, and eat greedily, for myself! It´s perfect! Have a wonderful day my friend.

    This looks so fresh and healthy! I introduced kimchi to my kids when they turned 3…the older one didn’t like it, but my younger one (more adventurous with food) LOVES it. Of course we rinsed it in a bit of water, but she can eat an entire bowlful on her own!

    I adore soba noodles. In fact, I made a dish very similar to this one for lunch yesterday. Mine had carrots and cucumber instead of edamame. Love the idea of edamame instead – extra protein!

    I agree – I never feel guilty for devouring Japanese food (even when it’s chicken karaage, shrimp tempura, mayo-laden California rolls…). I really should start incorporating healthier items like this delicious soba noodle dish. I love that you made it vegetarian with two of my favourite greens: edamame and green onion. Yum!

    Aside from it being delicious-looking, it also is healthy. This is good for those who are trying to shape their bodies because it has lesser calories. I think I’ll start regulating my diet too or lifestyle in general.

    I love soba noodles and I love this dish! I make a very similiar dish in the summer time when I need a cold noodle dish to cool me down but I sure could use a big bowl of this right now in 19 degree weather! Yummy! Looks delicous Alice. It’s making me super hungry!

    Thank you for the recipe. I made it tonight and enjoyed it. However you.mentioned you use a disposable plastic glove to stir it together at the end. This is unnecessary. Using disposable when there are other alternatives available is irresponsible, please think twice about the planet our future generations will inherit
