Friends, the holiday season is upon us. The weather is getting cooler, I’ve pulled out my sweaters and sweats and have been indulging a little too much. As we approach the holidays, from now until the end of the year, I try to be mindful about what I’m eating and I’m trying to not go crazy with indulging too much. I have worked a lot of foods back into my diet (pasta in moderation and bread from time to time and sweets!) and I have a big weakness for sweets.

Last year, when I was doing Faster Way to Fat Loss, I would make protein energy bites all the time and would eat one a day to satisfy my sweet tooth cravings.

Pumpkin Pie Spice Energy Bites

Equipment

Ingredients

  • 1 1/2 cups old fashioned rolled oats
  • 1 cup natural smooth peanut butter or any nut butter
  • 2 tablespoons flax + chia seed blend or chia seeds
  • 1 to 2 scoops protein powder
  • 1/2 cup maple syrup or honey
  • 1/2 cup pure pumpkin
  • 1 tablespoon pumpkin pie spice*
  • 1/2 teaspoon vanilla extract
  • 1 pinch kosher salt
  • 1/2 cup semi sweet or bittersweet chocolate chips + more if desired

Instructions

  • Using a large mixing bowl and a rubber spatula or spoon (or your hands!), combine/mix everything together until well combined and everything is sticking together. If your mix seems to crumbly or dry, add more peanut butter and/or maple syrup. If your mixture seems too wet, add more rolled oats. Use a small cookie scoop or tablespoon measuring spoon to scoop out and form and shape into balls.
  • Storing: if making a big batch, store in a freezer safe airtight container or gallon sized zip top bag. If enjoying right away, simply store in your refrigerator for at least 30 minutes to one hour.
    Energy bites can be stored in the fridge or freezer. If stored in the freezer, allow to come to room temp a bit and enjoy!

Notes

*if you don't have pumpkin pie spice, simply combine: 3 Tablespoons ground cinnamon, 2 teaspoons ground ginger, 2 teaspoons nutmeg, 1 1/2 tsp. ground allspice and 1 1/2 tsp. ground cloves. Some pumpkin spice mixes might leave out a spice or two, but most consist of at least two or three of the spices listed above. 
Whisk together the cinnamon, ginger, nutmeg, allspice, and cloves in a small bowl until well combined. Store in a small jar or container.
