I started really eating collard greens back in 2016. In fact, here’s my first ever collard greens wrap YouTube video. Collard greens are available year-round, but the peak time to buy is January through April. As a cool-season crop, they are one of the hardiest of all vegetables. They tolerate frosts and freezes better than many other plants in the leafy greens category.
If you are trying to eat healthier like me, collard green wraps can become your new best friend. I enjoy them raw because of the crisp and crunchy bite but you can also steam them. Remove the stem, fill them with protein, vegetables and whatever your fave dressing, condiments or even with hummus. These are so easy to make and super versatile.
Cobb Salad Collard Green Wrap
I had some leftover homemade Thousand Island dressing and had just made some bacon as well and decided to make a Cobb salad collard green wrap! This was so delicious! I also sometimes will just stuff with turkey deli meat, cheese, lettuce, tomatoes, mayo and mustard. The best! If you try this, please let me know what you think!

Cobb Salad Collard Green Wrap
Ingredients
For the Thousand Island Dressing:
- 1 cup mayonnaise
- 1/4 cup onion pulsed or blended into small pieces or finely chopped
- 2 to 3 tablespoons ketchup
- 2 to 3 tablespoons sweet pickle relish
- 1 teaspoon lemon juice
- 1 teaspoon smoked paprika
- 1/2 teaspoon kosher salt + more if needed
For the Wrap:
- 1 large sized collard green leaf stem removed*
- cooked chicken breast or rotisserie chicken sliced
- romaine lettuce chopped
- 1 slice tomato
- 1 large hard boiled egg sliced
- 1 to 2 strips crispy bacon
- olive oil extra virgin
- freshly cracked pepper
Instructions
For the Thousand Island Dressing:
- Mix by hand and combine all of the ingredients. Taste and adjust anything as needed. Set aside.
For the Wrap:
- Place the collard green leaf on a plate with a damp paper towel over it and microwave for 30 seconds. Place on your cutting board back side up. Spread some of the thousand island dressing in the center of the wrap. Top with the chicken, lettuce, tomatoes, hard boiled egg and crispy bacon. Lightly drizzle some olive oil and garnish with some freshly cracked pepper.
- Fold up and over from the bottom up, tuck in the sides and fold over to close. Slice in half if desired and enjoy!
