1/4cuponionpulsed or blended into small pieces or finely chopped
2 to 3tablespoonsketchup
2 to 3tablespoonssweet pickle relish
1teaspoonlemon juice
1teaspoonsmoked paprika
1/2teaspoonkosher salt + more if needed
For the Wrap:
1large sizedcollard green leafstem removed*
cooked chicken breast or rotisserie chickensliced
romaine lettucechopped
1slicetomato
1largehard boiled eggsliced
1 to 2stripscrispy bacon
olive oil extra virgin
freshly cracked pepper
Instructions
For the Thousand Island Dressing:
Mix by hand and combine all of the ingredients. Taste and adjust anything as needed. Set aside.
For the Wrap:
Place the collard green leaf on a plate with a damp paper towel over it and microwave for 30 seconds. Place on your cutting board back side up. Spread some of the thousand island dressing in the center of the wrap. Top with the chicken, lettuce, tomatoes, hard boiled egg and crispy bacon. Lightly drizzle some olive oil and garnish with some freshly cracked pepper.
Fold up and over from the bottom up, tuck in the sides and fold over to close. Slice in half if desired and enjoy!
Notes
*I also like to thin out the back of the stem (that's still attached to the leaf) if the stem is really thick
