Nectarine Tomato Mozzarella Salad! Sweet, salty, fresh and bright! Celebrate the month of August and the last month of summer break with this delicious and fresh salad!! It’s so easy to make and so good!
Peaches and nectarines are plentiful right now and I just love how sweet and delicious they are. I personally prefer nectarines over peaches. I think the first peach I had as a kid as too furry or something. I love them both but if I had to pick one to eat, it would be a nectarine.
Stone fruit are really just so versatile and delicious. Peaches, plums, cherries, nectarines, apricots and mangoes are not only delicious on their own but they can also be used in so many different ways in recipes. Raw or baked, stone fruit is one of my favorites!
Nectarine Tomato Mozzarella Salad
I know you’ve probably seen this before .. heck, you might have already tried this but I got the idea when I was eating a caprese salad and then my husband was cutting up a nectarine. And then, boom! This salad was born. I absolutely adore salads like this in the summer. So easy to make, you are not cooking anything, it’s quick and requires minimal ingredients. I hope you give this one a try! Nectarine Tomato Mozzarella Salad
Ingredients
- 1 to 2 large tomatoes sliced in thin wedges
- 2 to 3 ripe nectarines sliced in thin wedges
- 1 ball fresh mozzarella sliced thin or torn
- pesto homemade (see above) or store bought
- olive oil extra virgin
- fresh basil
- balsamic glaze
- Maldon sea salt flakes
Instructions
- Using a large plate or platter, place some pesto on and spread across the plate. Arrange the tomatoes, nectarines and mozzarella pieces over the pesto and around the plate. Drizzle some olive oil and balsamic glaze over the top. Garnish with fresh basil and sprinkle Maldon sea salt flakes over the top. Serve and enjoy!
