I just made this miso kale salad bowl and made this dressing. I doubled the dressing because I loved it so much and thought why not use this dressing on eggs? Friends, this is so delicious. . this might be my current fave for hard boiled egg combinations!
I know remember when I started making these egg flights, maybe in 2021, but now I love finding new toppings and new ways to make and eat eggs. Eggs are such a great source of protein and easy to meal prep! I make hard boiled eggs, peel them and keep them in the fridge. So, whenever I want an egg, I can make one for myself.

I don’t remember who came up with the name but someone on TikTok said I should call these my egg flights. So, the series was born! If you think about it, hard boiled eggs with toppings are not only so versatile but a great source of protein. They are also easy to make and easy to prep in advance. I have followers who now eat these every morning for breakfast, after a workout, for lunch and even for dinner! I love it!

As I mentioned above, I made a kale salad, miso bowl (inspired by the one from Sweetgreen) and loved this dressing so much, I had to put them on eggs. I am also making a rice noodle dish with this dressing. I can’t stop, it’s soooooo good!

Eggs with Miso Sesame Ginger Dressing
Ingredients
- 3 to 4 large eggs
- kewpie mayonnaise
- Miso Sesame Ginger Dressing see clickable link above
- furikake
Instructions
- How to make your hard boiled eggs: Place your eggs into a small pot and fill with water. Bring to a boil on your stovetop, cook your eggs for 8 or 9 minutes (see notes above). Immediately after cooking, place the eggs into an ice bath and peel within 1 to 2 minutes. My trick for easy peeling is to not leave the eggs in the ice bath for too long.
- Slice the eggs in half lengthwise, top with some kewpie mayonnaise, some of the Miso Sesame Ginger Dressing and sprinkle on some furikake. If you don't have furikake, crush some salted nori over the top and add some sesame seeds. Enjoy!
