Mexican Street Corn Salad
Even though September 22nd is the official last day of summer, I always feel like Labor Day is the beginning of our farewell to summer. We did absolutely nothing today and just watched tv and relaxed. Something that we all needed to do today. I did pick up some corn from the grocery store and we grilled. Grilled corn, chicken, zucchini and bread. My absolute favorites to throw on the grill.
If you are on TikTok, or just social media in general, chances are you’ve seen the corn boy. I have no idea how these things happen but someone made this little interview into a song. And it went viral. It’s the cutest thing ever.
If you find yourself with some corn, grill it and make this recipe! You won’t regret it.
Mexican Street Corn Salad
Ingredients
- 5 ears corn grilled and kernels removed
- 2 to 3 pieces grilled zucchini optional
- 1/2 cup fresh cilantro leaves finely chopped
- 1/3 cup red onion finely diced
- 1 jalapeño seeded and chopped
- 3 to 4 dashes Tabasco, Cholula or similar hot sauce
- 1 to 2 teaspoons Everything But The Elote Seasoning Blend*
- 2 dashes Tajín seasoning
- 1/2 to 1 teaspoon garlic powder
- 2 to 3 tablespoons mayonnaise + more if desired
- 2 to 3 tablespoons 2% plain Greek yogurt + more if desired
- Cotija or feta cheese finely crumbled
- juice from 1 lime
- serve with tortilla chips
Instructions
- Using a large mixing bowl, mix together all of the ingredients from the grilled corn to the fresh lime juice. Mix together, taste and adjust any ingredients as needed. If a creamier Mexican Street Corn Salad is desired, add more mayo and yogurt. Serve with tortilla chips and enjoy!
