I think I’ve said it here before . . Thanksgiving is like my Super Bowl Sunday. I’m super pumped for the day, there’s a lot of prep work and I go in with gusto. I go big with all the food on Thanksgiving Day. We eat well and we eat a lot.
Sometimes, however, I go over board and I cook too much food and I order too much. And we are left with tons of leftovers. But sometimes, if I really think about it, I think I actually want Thanksgiving Day food leftovers because this meal to me is the best. I mean, who doesn’t want a serving of turkey with stuffing and mashed potatoes and gravy again the following day? I know I do.
Mini Gobbler Sandwiches Using Thanksgiving Leftovers
We usually make a big casserole but this year, I’m making these mini gobbler sandwiches again. These are incredible. I add the butter, onion, Worcestershire sauce and poppy seed topping from those other sandwiches and that just ties everything together. So good!
So, this year, if you are lucky enough to have some Thanksgiving Day leftovers, you know what to do.
Mini Gobbler Sandwiches
Ingredients
- 12 square soft white dinner rolls any kind
- leftover turkey shredded
- leftover stuffing
- leftover mashed potatoes
- leftover veggies roasted Brussels sprouts
- mozzarella cheese shredded
- leftover cranberry sauce
- leftover gravy
- 4 to 5 tablespoons unsalted butter cubed
- 3 tablespoons onion finely chopped
- 1 to 2 tablespoons everything bagel seasoning
- 2 tablespoons Worcestershire sauce
- 1 teaspoon garlic powder
- 2 tablespoons yellow mustard optional
Instructions
- Adjust oven rack to middle position and heat oven to 350 degrees. Slice rolls in half horizontally. Arrange roll bottoms, cut side up and side by side, in a 13 x 9-inch baking dish. Layer in and scatter the shredded turkey, stuffing, mashed potatoes, roasted Brussels sprouts, mozzarella cheese, cranberry sauce and the leftover gravy. Top with the top side buns.
- Combine the butter and onions in a bowl. Microwave until butter is melted and onion is softened, for about 1 minute. Add the everything bagel seasoning, and whisk in the Worcestershire sauce, garlic powder, and the mustard into butter mixture until combined. Generously brush tops and edges of the sandwiches with all of butter mixture. Spoon any remaining solids over sandwiches.
- Cover dish with aluminum foil and if you can wait- let sit for 10 minutes to allow sandwiches to absorb sauce. Bake for 25 to 30 minutes. Then, uncover and continue baking until the cheese is melted around the edges and the tops are slightly firm, about 5 to 10 minutes. Let cool for 10 minutes before serving. Enjoy!
