Who would have guessed that the week of November 2nd, 2020 would be the longest week ever. Well, with Election Day this past Tuesday, I guess we knew this week would be long and stressful. My eyes have been glued to the TV. I am constantly checking the headlines on Apple News. And I’ve been stress eating.
At times like this, the salads go out the window for me and I just want carbs, soups, stews, kimchi fried rice, pizza and more.
Comfort Food: This Week for Dinner
This post is a little late in being posted. It’s Friday. But sometimes tells me we will need lots of comfort food for the weeks ahead. No matter what happens in this election. I am proud to be an American. I think it’s pretty awesome that so many people voted! “With over a 141 million votes tabulated so far in the 2020 US presidential election and millions more to go this year’s turnout is one of the highest.” At least 159.8 million votes are projected.
It’s officially cold and I’m layering and wearing a jacket. We’ve also finally turned the heater on and brought out all of warm and fuzzy blankets! All I want to eat right now are soups, chilis, stews and just savory, delicious comfort food to warm my body. Here are some of my favorites! Comfort food for the longest week ever.
Comfort Food: This Week for Dinner
MONDAY
Butternut Squash Turkey Chili. I love squash (I’m using three types of squash in this recipe) so I roasted some delicata and carnival squash and used that to top my chili. If you want to keep this a meatless Monday, simply omit the ground turkey.
TUESDAY
If you haven’t made my Chicken and Black Bean Enchiladas, what are you waiting for? Pick up a rotisserie chicken, canned beans and a jar of your favorite enchilada sauce, yes I also included a recipe if you want to make your own, and make this now. This is comfort food at its finest.
WEDNESDAY
Beef Stew! Above, with biscuit croutons, made on the stovetop, or my instant pot version.
THURSDAY
Pasta e Fagioli is one of my all time favorites! This always hits the spot! Pictured above, at the very top, is my stovetop version. Or, I also have an Instant Pot version as well. Click here for that one. I also have a vegetarian version with butternut squash. So good!
FRIDAY
My One Pot Beef Stroganoff is by far, one of the most requested dishes from my family ever during the winter time. This is a pan of happiness right here. If you’ve never tried my Beef Stroganoff, you have to make this! Believe me, you will love this one for sure.
