Happy Saturday! I’m home after a whirlwind trip to Nashville with White Lily Flour. I love traveling but I’m so happy to be home. Not sure if you guys noticed but I didn’t post any new recipes here last week. After having the flu, I decided to give myself some time to rest and recover.
It felt really weird not posting anything here and I was starting to doubt my decision. . as a food blogger, it’s hard not to fall into the comparing your blog with others thing. On the day when I was feeling like I let people (and myself) down, I received several very sweet emails and comments on Instagram. The fact that so many of you out there are cooking and baking my recipes makes me so happy.
Anyway, I’m back and I’m healthy and I’ll be back next week with some new recipes! I also have lots going on and new videos I can’t wait to share! Thank you for going on this journey with me . . I love exploring food with you all!

Spaghetti Squash Lasagna from me! I’m sure you can still get your hands on some spaghetti squash. . and if you can, you have to make this! It’s so delicious and practically guilt-free!
Vegetarian Tip: You can easily skip the ground turkey and cheese to make this vegetarian and vegan.
Tuesday
Easy Minestrone Soup from Lauren Kelly Nutrition.
Wednesday
One Pot 30 Minute Pasta e Fagioli from Flavor the Moments.
Prep Ahead: The entire meal comes together very quickly, but the onion, garlic, and kale may be prepped in advance to save even more time.
Thursday
Sausage Feta and Almond Parsley Pesto Pasta from greens & chocolate.
Prep Ahead: The pesto can be made in advance.
Friday
Creamy Mushroom and Spinach Pasta from Spoonful of Flavor.

The work will always be there but your health and recovery are more important. Hope the rest of your family is in good health. You know the spaghetti squash recipe is one of my favorite of your recipes. There is still plenty of them in stores so I will try it again. So satisfying! ? Here where I live in the holiday and winter season we eat a lot of tasty but not so healthy food. Now that the winter is finally over I need to change my winter eating habits. It’s so great that I came up with your blog because you have some delicious recipes. I must admit that I hate spinach but I’m gonna try this Creamy Mushroom and Spinach pasta. And can I ask you something, I’m not a big fan of squash but I love zucchini, can I make spaghetti out of zucchini instead?
