The kids and I were at Panera Bread the other day and Madeline asked for a salad to go with her mac and cheese. The guy behind the counter was like, “That’s the first time I have ever seen a kid ask for a salad.” Insert proud mom moment.

Mediterranean Veggie Wraps

Ingredients

  • 2 Tbsp. Hellmann’s® Organic Mayonnaise
  • 2 10-inch whole grain wraps
  • 1 cup baby spinach leaves or salad greens
  • 1/2 cup cucumber sliced or chopped
  • 1/2 cup sliced bell peppers red and yellow
  • 1/2 cup crumbled goat cheese
  • 1/4 cup chopped Kalamata olives
  • 1/4 cup thinly sliced red onion

Instructions

  • Spread Hellmann’s® Organic Mayonnaise on wraps. Layer ingredients down center of each wrap.
  • Roll and fold the filled wrap. Slice and enjoy!

    Wow! This looks amazing and sooo simple. I’m loving wrap and one hand eating recipes lately. Having a baby is fun, and interesting when you have to think about anything and everything you can eat with one hand. I’ve discovered eating with chopsticks is one of the easiest one handed things I can do!
