Hey everyone! It’s officially December and I am kicking off my holiday cookie palooza extravaganza today! I’m going to try to knock out 4 cookie recipes: bake them, photograph them and eat them!

There’s only two full weeks until we leave for the holidays, all of my deadlines are due and the kids go on winter break. To say these next two weeks will be busy is an understatement.
I also have to find time in all of this to work on some local events and get ready for the holidays. Let’s face it. This month is going to be crazy for all of us so I hope you can look to me and my friends for dinner ideas! There should be at least one thing that we don’t have to worry or stress about, right?!
Check out the menu line up for this week. . some recipes do require a little bit of time but, since it’s December and I have comfort food on the brain, I don’t mind spending a few extra minutes at the stove. I hope you agree! Have a great week and I’ll be back on Monday with something delicious!

Sweet Potato Black Bean Corn Enchiladas from Flavor the Moments. Doesn’t this look amazing?!
Prep Tips: The enchilada sauce and the filling may be made in advance, and the whole meal may be assembled ahead of time so all you have to do is pop it in the oven!
Thursday
Thai Peanut Chicken Noodles from greens & chocolate. I love all of Taylor’s recipes! Trying this one for sure!

Easy Chile Rellenos Casserole from Spoonful of Flavor. I’m totally making this!
